Back in the dorms at UCLA oh so long ago, one of my best friends was vegetarian and would make these amazing simple quesadillas in the cafeteria. When I made them once for my husband, he was impressed and it was then that I realized that not all quesadillas were made equal! Yesterday I was totally craving some cheesy goodness, so I whipped up some veggie quesadillas. These are a little more complicated, but really simple enough.
These veggie quesadillas go great with sour cream and salsa. Here are a couple of homemade salsa recipes that I have posted in the past: tomatillo salsa and smokey tomato salsa. If you want to make your own flour tortillas, here is a good recipe for flour tortillas.
1 teaspoon oil
A few slices of bell pepper (red or green)
A few slices of onions
Salt
Medium to large flour tortillas
Sharp cheddar cheese grated (jack might be more traditional, but I love cheddar!)
Chopped cilantro
Sour cream & salsa!
- Heat the oil in a skillet and saute the bell pepper and onions on high stirring constantly. I generally add the bell pepper slightly before the onions since onions take less time to cook.
- Lay out a flour tortillas and sprinkle half with cheese.
- Add the bell peppers and onions and cilantro.
- Top with another sprinkling of cheese (sandwiching in the veggies keeps the quesadilla held together since the cheese sticks to the tortilla on both sides).
- Fold over the tortilla and lightly butter both sides.
- Cook over medium heat flipping when one sides starts to brown.
- Once the other side is lightly brown and the cheese is melted, it is ready.
- Serve with sour cream and salsa.
