Potato & Onion Subji

I mentioned this on a post not too long ago, but I’ll mention it again :-). The last night on our last trip to India we had this amazing dinner of tomato sev curry and potato onion subji. It was such a yummy combination and I’ve been meaning to make it ever since! I forgot to get the recipes from my mother in law, but here is my stab at the potato and onion subji. Subji means vegetable dish.

The onions in this subji are caramelized and give it a nice sweetness. I’ve recently added ghee to our pantry. It works really well in this, but you can use oil too! This made enough for 2 people along with another dish.

2 tablespoons ghee
1 onion sliced
2 garlic cloves chopped
4 baby potatoes cut into 4ths
1/2 teaspoon turmeric
1/4 teaspoon chili powder
1/2 teaspoon cumin powder
Salt
  1. Heat ghee in a saute pan and cook onions until they start to caramelize.
  2. Add potatoes, turmeric, chili powder, cumin and salt and saute for a few minutes.
  3. Add 1/2 cup water, cover and cook over medium low heat until the potatoes are tender.
