Vegetarian Caesar Dressing (& Caesar Toasts)

This is a traditional caesar salad dressing minus the anchovies. Egg yolk is whipped up with a few other ingredients and then olive oil is drizzled in and whisked creating a creamy and tangy caesar dressing. This recipe is adapted from Wolfgang Puck’s recipe.

Instead of having a caesar salad with this dressing, we made caesar toasts to go with vegetarian pasta carbonara. Just spread the caesar dressing on bread, top with a little cheese, and broil…

Caesar Dressing

1 egg yolk
2 tablespoons fresh lemon juice
1/8 teaspoon vegetarian Worcestershire sauce
1 teaspoon mustard
1 garlic clove minced
1/8 teaspoon red chili flakes
Salt
Pepper
1/2 cup olive oil

  1. Whisk together the egg yolk, lemon juice, vegetarian Worcestershire sauce, mustard, garlic, red chili flakes, salt and pepper.
  2. While whisking really fast, drizzle in the olive oil as slowly as possible to emulsify the olive oil.
