This is a traditional caesar salad dressing minus the anchovies. Egg yolk is whipped up with a few other ingredients and then olive oil is drizzled in and whisked creating a creamy and tangy caesar dressing. This recipe is adapted from Wolfgang Puck’s recipe.
Instead of having a caesar salad with this dressing, we made caesar toasts to go with vegetarian pasta carbonara. Just spread the caesar dressing on bread, top with a little cheese, and broil…
1 egg yolk
2 tablespoons fresh lemon juice
1/8 teaspoon vegetarian Worcestershire sauce
1 teaspoon mustard
1 garlic clove minced
1/8 teaspoon red chili flakes
Salt
Pepper
1/2 cup olive oil
- Whisk together the egg yolk, lemon juice, vegetarian Worcestershire sauce, mustard, garlic, red chili flakes, salt and pepper.
- While whisking really fast, drizzle in the olive oil as slowly as possible to emulsify the olive oil.
