Upma

Upma is a South Indian breakfast made with semolina (suji) and is kind of like an Indian version of cream of wheat. The first time I had it I loved it! And I think it must have been an instant version, which is also good, but doesn’t compare to homemade.

2 teaspoons butter
1 cup suji
2 teaspoons oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon channa dal
5-6 curry leaves
1 small onion chopped
1 teaspoon ginger minced
3 green chiles cut lengthwise
3-4 cups of water
Salt
Squeeze lime
Cilantro finely chopped

  1. Heat butter in a skillet and toast suji until lightly tan.
  2. In a saucepan heat oil and add mustard seeds until they start to pop.
  3. Add urad dal, channa dal, and curry leaves and saute until toasted.
  4. Add onions, ginger and green chilis and saute until the onions are soft.
  5. Add suji, water and salt. Add water slowly in order to get the consistency you would like. Cook until the suji is soft.
  6. Add a squeeze of lime, stir, and top with cilantro.
  7. Serve by itself or with cilantro chutney.
