Upma is a South Indian breakfast made with semolina (suji) and is kind of like an Indian version of cream of wheat. The first time I had it I loved it! And I think it must have been an instant version, which is also good, but doesn’t compare to homemade.
2 teaspoons butter
1 cup suji
2 teaspoons oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon channa dal
5-6 curry leaves
1 small onion chopped
1 teaspoon ginger minced
3 green chiles cut lengthwise
3-4 cups of water
Salt
Squeeze lime
Cilantro finely chopped
- Heat butter in a skillet and toast suji until lightly tan.
- In a saucepan heat oil and add mustard seeds until they start to pop.
- Add urad dal, channa dal, and curry leaves and saute until toasted.
- Add onions, ginger and green chilis and saute until the onions are soft.
- Add suji, water and salt. Add water slowly in order to get the consistency you would like. Cook until the suji is soft.
- Add a squeeze of lime, stir, and top with cilantro.
- Serve by itself or with cilantro chutney.
