Sunny Eggs & Baked Beans

This is a simple delicious breakfast or dinner when you’re not feeling like cooking! Onions, both sauteed and raw, green chilis, and cilantro give special kick to basic baked beans in a can. Top with a sunny side up egg and served with toast, sliced tomatoes, cilantro, and potato chips, it’s a complete meal! This serves 2.

1 teaspoon coconut oil or butter
1 small onion sliced
2 green chilis chopped
1 can of your favorite baked beans
1 teaspoon butter
2 eggs
Salt
1/4 onion finely diced
Cilantro chopped
Handful potato chips
Slice tomatoes
Buttered toast

  1. Heat coconut oil in a small pan and saute the onions until browned, adding the green chilis parat way through cooking. Add baked beans and heat through.
  2. In an omelette pan, heat the butter, add the eggs,  sprinkle with salt and add a little water to the edges of the pan, cover and cook until the white is cook through, but the yolk is still runny.
  3. Sprinkle with onions, cilantro and potato chips and service with salted sliced tomatoes and buttered toast.
