This is a simple delicious breakfast or dinner when you’re not feeling like cooking! Onions, both sauteed and raw, green chilis, and cilantro give special kick to basic baked beans in a can. Top with a sunny side up egg and served with toast, sliced tomatoes, cilantro, and potato chips, it’s a complete meal! This serves 2.
1 teaspoon coconut oil or butter
1 small onion sliced
2 green chilis chopped
1 can of your favorite baked beans
1 teaspoon butter
2 eggs
Salt
1/4 onion finely diced
Cilantro chopped
Handful potato chips
Slice tomatoes
Buttered toast
- Heat coconut oil in a small pan and saute the onions until browned, adding the green chilis parat way through cooking. Add baked beans and heat through.
- In an omelette pan, heat the butter, add the eggs, sprinkle with salt and add a little water to the edges of the pan, cover and cook until the white is cook through, but the yolk is still runny.
- Sprinkle with onions, cilantro and potato chips and service with salted sliced tomatoes and buttered toast.
