I decided to pick up some Soyrizo a couple of weeks ago for a different breakfast and it was quite good! Spicy and flavorful and great with eggs. We had the Soyrizo eggs with flour tortillas and homemade Smokey Tomato Salsa which gets its smokiness from chipotle peppers in adobo sauce.
Soy Chorizo Eggs
1 teaspoon oil
1/4 package Soyrizo
4 eggs scrambled
- Heat oil in a small skillet.
- Add Soyrizo until it browns a little.
- Add eggs and scramble until cooked through.
- Serve with smokey tomato salsa, flour tortillas, and sour cream.
