Caramel Tomatoes

I got the idea for these tomatoes from a recipe I received in an email. I am not sure how I got the email, but I could have sworn the recipe came from Cook’s Country, but when I searched for Caramel Tomatoes I got nothing. Anyways, the original recipe says to bake the tomatoes in the oven for a while and then cook them again on the stove. It was for some crazy legnth of time that I bet would have made the absolutely delicious, but I choose a much simpler route. I used little tomatoes (instead of big ones) and just cooked them for about 25 minutes in the toaster oven. They were still wow! We had them with Humbodlt Fog cheese, amazing cheese which you can get at whole foods.

1 container small or cherry tomatoes sliced in half
Salt
~1/2 cup brown sugar
~2-3 tablespoons butter melted
Fresh ground pepper

  1. Lay the tomatoes flat side up in a baking dish.
  2. Sprinkle generously with salt (tomatoes really soak up salt).
  3. Sprinkle the tomatoes with the brown sugar.
  4. Drizzle on the melted butter.
  5. Sprinkle with the fresh ground pepper.
  6. Bake at 375 degrees for about 25 minutes.
  7. Serve with cheese and baguette.
