This chili doesn’t have buffalo in it! It is just made using the basic ingredients in buffalo hot wings: butter and hot sauce. This chili has a really bright healthy taste and is adapted from this recipe.
2 tablespoons butter
2 onions chopped
3 carrots chopped
3 celery stalks chopped
4 garlic chopped
5 cups vegetarian stock (I used 3 tabelspoons Better than Bouillon mushroom w/ 5 cups water)
1 14 ounce can diced tomatoes
2 14 ounce cans beans rinsed (I used one cannellini and one kidney)
1/2 cup sweet corn
1 tablespoon cumin
1/2 cup Crystal hot sauce
- Sauce butter in a medium sauce pan.
- Saute onions, carrots, celery until tender, adding garlic a few minutes into sauteing.
- Add stock, diced tomatoes, beans, corn, cumin and hot sauce. Cook for 10-15 minutes to let the flavors meld.
