Easy and oh so tasty, these brie, pear and caramelized onion sandwiches are delicious!
I actually used fig jam too at first, but then realized it was too sweet on top of sweet, so I made my next sandwich without it and yummy!
Per Sandwich
Olive oil for sauteing
1/2 onion
Salt
2 pieces good bread like a crusty sourdough or an artisan loaf
2-3 ounces brie cheese
1/4 -1/3 pear sliced
Olive oil for toasting.
- Heat oil in a skillet and add the onions. Cook very slowly for a really long time (say 30 minutes or so) to get the onions super caramelized and sweet. Salt near the end of caramelizing (not at the beginning because it makes the onions steam more than saute, and you want them to saute!).
- Take your bread and lay on the brie, then the pears, then the caramelized onions, top with the other piece of bread.
- Heat a little olive oil in a skillet and add the sandwich/es. Press the sandwich down a little. I used this Lodge grill press. After a few minutes, flip and cook the other side.
