BBQ Ranch Salad

This BBQ ranch salad is full of hearty ingredients like black beans, corn, and yummy fresh made tortilla strips. I really like a salad to have lot of different textures and flavors.

I think the addition of avocado would be fantastic too, but I didn’t think of it when I made this BBQ ranch salad. Next time 🙂

I brought this salad to a potluck with 6 people.

Oil for deep frying (I used olive oil)
10 corn tortillas sliced in strips
Salt
1 can black beans rinsed
1 1 /2 cups corn
1/2 red onion finely chopped
2 roma tomatoes chopped
3 romaine hearts chopped
1 green chili, jalepeno or serrano chili minced (optional)
1 cup cilantro chopped
Ranch dressing (my favorite is Trader Joe’s Parmesan Ranch)
Smokey BBQ sauce

  1. Heat oil in a small sauce pan and deep fry the tortillas in batches. Strain on a paper towel lined plate and salt when they are still hot.
  2. Mix all the ingredients together, toss with some ranch and BBQ sauce to taste (I love dressing!), and top with tortilla crunchies!
