This BBQ ranch salad is full of hearty ingredients like black beans, corn, and yummy fresh made tortilla strips. I really like a salad to have lot of different textures and flavors.
I think the addition of avocado would be fantastic too, but I didn’t think of it when I made this BBQ ranch salad. Next time 🙂
I brought this salad to a potluck with 6 people.
Oil for deep frying (I used olive oil)
10 corn tortillas sliced in strips
Salt
1 can black beans rinsed
1 1 /2 cups corn
1/2 red onion finely chopped
2 roma tomatoes chopped
3 romaine hearts chopped
1 green chili, jalepeno or serrano chili minced (optional)
1 cup cilantro chopped
Ranch dressing (my favorite is Trader Joe’s Parmesan Ranch)
Smokey BBQ sauce
- Heat oil in a small sauce pan and deep fry the tortillas in batches. Strain on a paper towel lined plate and salt when they are still hot.
- Mix all the ingredients together, toss with some ranch and BBQ sauce to taste (I love dressing!), and top with tortilla crunchies!
