I’ve recently been trying different seitan recipes and this is definitely my favorite for chicken style seitan! Great flavor and faster than any other recipe I’ve seen. I found it on Yeah, That “Vegan” Shit.
Seitan is basically “wheat meat”, a meat alternative made using only the gluten, the protein part of wheat. It is very high in protein and tastes yummy, even by itself! You can buy seitan already made at Whole Foods, but I think is way better and less processed.
You can find besan/chickpea/garbanzo flour at an Indian Market or Whole Foods and vital wheat gluten and nutritional yeast at Whole Foods. I left out the herbs so that it could go in any dish. So far I’ve made sesame honey seitan, seitan “chicken” salad, and BBQ 5 Spice Hoagies.
Wet Ingredients
1 1/2 cups water
2 tablespoon soy sauce
1 Trader Joe’s frozen garlic cube
2 tablespoons olive oil
Dry Ingredients
1 1/2 cups vital wheat gluten
1/4 cup besan flour (chickepea/garbanzo bean flour)
1/4 cup nutritional yeast
1 teaspoon salt
- Mix all the wet ingredients together in a bowl.
- Mix all the dry ingredients together in a bigger bowl.
- Add the wet ingredients to the dry ingredients and mix well, then knead for a few minutes to develop the gluten. It will seem very wet and sloppy at first but once the gluten activates it will tighten up (but still feel wet).
- Cut into 4 pieces and wrap each in foil, making sure there is enough room for the seitan to expand a little. Steam for 35 minutes, then let cool.
