Spinach & Artichoke Dip Sandwich

So let’s take spinach and artichoke dip. Yum! Now how about instead of having lots of the dip saucy stuff, let’s have more spinach and artichoke since we aren’t really making a dip. Then how about we put it in a sandwich! This spinach and artichoke dip grilled sandwich was inspired by Joy the Baker. I used mayo instead of cream cheese because I love mayo especially in spinach and artichoke dip. We also found that the cheese wasn’t really necessary. The sandwhich doesn’t hold together super well, but who cares when it tastes good and all the little sandwich drippings are so yummy to eat in the end?

1 teaspoon olive oil
4-5 cups spinach
Salt
5 artichoke hearts chopped (not the oil/vinegar kind – I used canned from Trader Joe’s)
1 tablespoon mayonnaise (Best Foods is best!)
2 tablespoons sour cream
1/2-1 teaspoon srirachi
4 slices bread (I used sourdough)
Touch of butter

  1. Heat the olive oil in a skillet and add the spinach and a touch of salt. Saute the spinach until wilted.
  2. Mix the spinach with the artichoke hearts, mayo, sour cream and srirachi. Load up the bread with the mixture making a sandwich.
  3. In a big skillet melt just a little butter. Add the sandwhich carefully and press gently so all of stuffing doesn’t fall out. I used a Lodge grill press. Carefully turn after a few minutes and cook the other side.
