This carrot and tomato soup is so creamy, but without the cream! Just sauteing the onions and blending them with the carrots and tomatoes gives such depth to this simple to make soup. Of course, you can always add a little cream too.
1/2 tablespoon olive oil
1 red onion sliced
2 cloves garlic
2 good sized carrots diced
3 cups water
1 can diced tomatoes w/ juice
1 squeeze ketchup (about a tablespoon)
Salt
Pinch of nutmeg
Bit of sage
(or any of your favorite herbs and/or spices!)
- Heat oil in a saucepan and add the onions. After a couple of minutes add the garlic and carrots. Once the carrots start to brown, add the water, cover and boil until the carrots are super soft.
- Throw the onions and carrots into the blender with the diced tomatoes, and a squeeze of ketchup, and salt, and blend until smooth.
- Add back to the pan and add herbs and spices, stir and heat up again. If you forgot to saute the garlic earlier, add a Trader Joe’s frozen garlic cube like I did 🙂
- Top with parmesan or other salty cheese!
