Totally different than baked macaroni & cheese, this recipe uses a roux and is creamy and quick. This is the kind of mac and cheese that goes great with some chopped up veggie dogs!
2 cups macaroni
2 tablespoons butter
1/6 cup flour
1 1/2 cup milk
1 teaspoon dried mustard
1/2 teaspoon salt
1 cup yummy cheese, I used an English coastal cheddar
Fresh ground black pepper
- Boil the macaroni according the package directions.
- Meanwhile heat the butter and flour in a sauce pan and stir for a few minutes to get the flour cooked.
- Slowly whisk in the milk to prevent lumps and cook for a few minutes until thick and creamy.
- Whisk in the dried mustard and salt, then the cheese and stir until the cheese is melted.
- Drain the noodles and toss with the cheesy sauce to coat. Sprinkle with fresh ground pepper.
