Creamy Mac & Cheese in 15 Minutes

Creamy Mac Cheese 1

Totally different than baked macaroni & cheese, this recipe uses a roux and is creamy and quick. This is the kind of mac and cheese that goes great with some chopped up veggie dogs!

2 cups macaroni
2 tablespoons butter
1/6 cup flour
1 1/2 cup milk
1 teaspoon dried mustard
1/2 teaspoon salt
1 cup yummy cheese, I used an English coastal cheddar
Fresh ground black pepper

  1. Boil the macaroni according the package directions.
  2. Meanwhile heat the butter and flour in a sauce pan and stir for a few minutes to get the flour cooked.
  3. Slowly whisk in the milk to prevent lumps and cook for a few minutes until thick and creamy.
  4. Whisk in the dried mustard and salt, then the cheese and stir until the cheese is melted.
  5. Drain the noodles and toss with the cheesy sauce to coat. Sprinkle with fresh ground pepper.
