One of my favorite breakfast items when I first visited India was cabbage sambharo with gathiya (chick pea flour chips). Cabbage sambharo is super easy to make. You just temper mustard seeds, green chilis and saute the cabbage for a few minutes. Add salt and voila! The chips are light and crunchy and a perfect match.
1-2 tablespoons oil
1 1/2 teaspoon mustard seeds
2 green chilis chopped
1/2 cabbage cut into chunks
1/2 teaspoon turmeric
Salt
- Heat oil in a saute pan and add the mustard seeds. Once the mustard seeds starts to pop, add the green chilis and cook for a couple of minutes.
- Add the cabbage, turmeric and salt, and cook stirring often until the cabbage just starts to soften. It doesn’t need to be super cooked.
- Remove from heat and serve at room temperature with gathiya (chick pea flour chips).
