Homemade Tomatillo Salsa

I felt like it was time to make homemade tomatillo salsa. The can is fine in a pinch, but nothing beats fresh. This recipe is adapted from the easier version of Gimme Some Oven’s Tomatillo Salsa Verde (see Ali’s tip near the bottom).

1 pound tomatillos skinned, husked, quartered, and the little tough stem thing removed
2 jalapeno or serrano peppers
3 unpeeled garlic cloves
1/4 onion cut into wedges
1/2 cup water
Salt
1/2 cup cilantro

  1. Put tomatillos cut side down on a broiler pan along with the jalapenos or serranos, unpeeled garlic, and onions. Broil flipping occasionally until the tomatillos are browned and the insides soft. You could also forget to put the jalapenos in under the broiler and end up roasting them on the open gas flame like I did :-).
  2. Cool down a bit and then throw into a food processor (I actually threw everything into the food processor and put it in the freezer for a few minutes to save time).
  3. Add salt and blend for a few seconds, then add cilantro and blend for a few seconds more.
