This recipe for blue cheese pesto and avocado toasted sandwiches was inspired by this wonderful green goddess grilled cheese picture. Look at the luscious avocados, so smooth and creamy next to a good spread of pesto! I decided to make a pesto using basil, green onions, kale, blue cheese, and walnuts and it was a great compliment to the creamy avocado.
Blue Cheese Pesto (or use your favorite pesto!)
1 garlic clove
1/2 cup fresh basil
2 green onions (green part only)
Big handful kale
1 ounce crumbled blue cheese
1/4 cup walnuts
2 tablespoons olive oil
- Throw garlic in a food processor until minced. Add the basil, green onions, and kale and mince. Add in the blue cheese, walnuts and salt and pulse a few times. Salt to taste. Pulse, while drizzling in the olive oil.
2 slices whole wheat bread
1 slice cheese (I used white cheddar)
1/2 avocado sliced
- Lay a slice of cheese on one slice of bread. Add sliced avocado and sprinkle with salt. Lather the pesto on the other slice and lay it on top making a sandwich.
- Heat a little olive oil in a pan. Add the sandwich and brown on each side for a few minutes.
