BBQ Seitan Sandwich w/ Spicy Sweet Coleslaw

This BBQ Seitan Sandwich is a great little sandwich with so many flavors! I used seitan this time which is a protein sauce made by removing the starch from whole wheat flour. This time I bought it at a fantastic vegan restaurant called Native Foods, but you can also get it in a package from Whole Foods.

2 tablespoons oil
3 onions sliced (against the grain seems to caramelize faster)
2 teaspoons brown sugar
salt
1/2 head of cabbage finely chopped
1 carrot shredded
1 jalapeno finely diced
1/2 cup cilantro chopped
2 tablespoons white vinegar
Juice from 1/2 a lime
3 tablespoons mayo
2 tablespoons sugar
Salt
12-16 ounces seitan (or other vegetarian meat product) chopped up
1/2 cup bbq sauce
Something spicey like a chopped jalapeno or chili powder
Whole wheat hamburger buns

  1. Heat the oil in a skillet and cook the onions until they are super caramelized. This takes a long time, maybe 30 minutes, so have this going first. Add salt and sugar later on during the cooking.
  2. Mix the cabbage, carrot, cilantro, vinegar, lime juice, mayo, and sugar and salt in a bowl.
  3. Heat up the seitan with the bbq sauce and something spicey.
  4. Toast the buns, then top with the bbq seitan, caramelized onions, and coleslaw. Yum!
