This BBQ Seitan Sandwich is a great little sandwich with so many flavors! I used seitan this time which is a protein sauce made by removing the starch from whole wheat flour. This time I bought it at a fantastic vegan restaurant called Native Foods, but you can also get it in a package from Whole Foods.
2 tablespoons oil
3 onions sliced (against the grain seems to caramelize faster)
2 teaspoons brown sugar
salt
1/2 head of cabbage finely chopped
1 carrot shredded
1 jalapeno finely diced
1/2 cup cilantro chopped
2 tablespoons white vinegar
Juice from 1/2 a lime
3 tablespoons mayo
2 tablespoons sugar
Salt
12-16 ounces seitan (or other vegetarian meat product) chopped up
1/2 cup bbq sauce
Something spicey like a chopped jalapeno or chili powder
Whole wheat hamburger buns
- Heat the oil in a skillet and cook the onions until they are super caramelized. This takes a long time, maybe 30 minutes, so have this going first. Add salt and sugar later on during the cooking.
- Mix the cabbage, carrot, cilantro, vinegar, lime juice, mayo, and sugar and salt in a bowl.
- Heat up the seitan with the bbq sauce and something spicey.
- Toast the buns, then top with the bbq seitan, caramelized onions, and coleslaw. Yum!
