It is an old favorite. You batter and fry tempeh and top with baja style toppings. You can also use drained tofu strips. The key ingredient is the white sauce, so don&#8217;t skimp on it!<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/mexican-recipes\/baja-tempeh-tacos\/attachment\/baja-tempeh-tacos-2\/\" rel=\"attachment wp-att-2567\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2567\" title=\"Baja Tempeh Tacos\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Baja-Tempeh-Tacos-1024x768.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Baja-Tempeh-Tacos-1024x768.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Baja-Tempeh-Tacos-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>1 package tempeh (I get it from Whole Foods)<br \/>\n2-3 tablespoons mayo (full fat! the other just will not taste right)<br \/>\n2-3 tablespoons sour cream<br \/>\n1\/2 cup milk<br \/>\n1\/4 head of cabbage thinly sliced<br \/>\n1\/2 cup cilantro chopped<br \/>\nSharp or extra sharp cheddar cheese cut into slices (thick enough so that you can taste the cheddar, not shredded)<br \/>\n1 avocado sliced and salted (optional, great if you have an avocado around!)<br \/>\n1\/2 cup flour<br \/>\nSalt<br \/>\nBeer or water enough to make a batter<br \/>\nOil for frying<br \/>\n8 corn tortillas<br \/>\nOlive oil cooking spray<br \/>\nSalsa (store bought or homemade)<br \/>\nLime<\/p>\n<ol>\n<li>Cut tempeh into strips (I like flat long strips roughly 1\/8&#8243; x 1&#8243; x 3&#8243;)<\/li>\n<li>Boil tempeh in water and salt for 10-15 minute to remove the fermented taste.<\/li>\n<li>Meanwhile mix your white sauce: mayo, sour cream, and milk (I use a little jar and shake it real good).<\/li>\n<li>Prep your cabbage, cilantro, cheddar cheese, and avocado.<\/li>\n<li>Mix flour, salt, and beer or water to make a batter.<\/li>\n<li>Drain tempeh and coat with batter.<\/li>\n<li>Heat oil to medium high and cook battered tempeh until both sides are golden brown.<\/li>\n<li>Lightly spray tortillas with olive oil cooking spray and toast them over a gas burner flipping constantly until they become a little stiff and browned on the edges (they will be cold brittle, then soft, then they will firm up).<\/li>\n<li>Make your tacos: Top a tortilla with a piece of tempeh, cabbage, cilantro, cheddar, avocado, white sauce (lots!) salsa, and lime.<\/li>\n<\/ol>\n<div class=\"social-likes social-likes_notext\" data-title=\"Baja Tempeh Tacos\" data-url=\"https:\/\/mayabugs.com\/blog\/baja-tempeh-tacos\/\" data-counters=\"yes\"><div class=\"facebook\" title=\"Share link on Facebook\"><\/div><div class=\"plusone\" title=\"Share link on Google+\"><\/div><div class=\"twitter\" data-via=\"mayabugs\" title=\"Share link on Twitter\"><\/div><div class=\"pinterest\" title=\"Share image on Pinterest\" data-media=\"\"><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>I love making all sorts of tacos and have been wanting to make baja tempeh tacos&nbsp;for some time now.
