Puffed puris that you fill with potato, chick peas, sweet chutney and spicy mint water (pani means water). You put whole thing into your mouth where it all bursts. It is a delight and it is addictive! In India, pani puri vendors pass out pani puri to all the customers in front of them, making each person one pani puri then going on to next person and so on. Around here, you really can&#8217;t get good pani puri, and what do I do when we can&#8217;t get something out? I try and make it! Since my husband&#8217;s sister loves pani puri from Calcutta, I decided to look up a recipe for a Calcutta style pani puri. Voila! I found <a title=\"Calcutta Style Pani Puri\" href=\"http:\/\/www.archanaskitchen.com\/indian-recipes\/indian-street-food\/89-pani-puri\">this one<\/a> on Archana&#8217;s Kitchen blog and I really like it.<\/p>\n<p>All the components of pani puri should be on the table and everyone makes their own. Sorry my picture is not the best. I always forgot to take a picture and then try and get one together while eating! This dish is much more flavorful than it looks in my picture!<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/chaat\/pan-puri\/attachment\/pani-puri\/\" rel=\"attachment wp-att-2570\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2570\" title=\"Pani Puri\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Pani-Puri-1024x768.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Pani-Puri-1024x768.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Pani-Puri-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\">Water<\/span><br \/>\n3 cups water<br \/>\n1-2 cups mint<br \/>\n1-2 cups coriander<br \/>\n5 green chilis<br \/>\n1 teaspoon of chili powder<br \/>\nlemon sized ball of tamarind soaked in hot water using the strained water<br \/>\nSqueezes of lemon or lime<br \/>\n1 tablespoon black salt<br \/>\n1 tablespoon cumin seeds<br \/>\n1 tablespoon chaat masala<br \/>\n2 cups more water<\/p>\n<ol>\n<li>Toast and grind the cumin.<\/li>\n<li>Put all ingredients except the more water into a blender and blend.<\/li>\n<li>Pour into a pitcher or bowl, top with more water, then put in the fridge overnight to let the flavors meld.<\/li>\n<li>Strain so that you have only liquid left.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">Filling<\/span><br \/>\n3-4 potatoes<br \/>\n1 can chick peas (depending on the can, you may need to cook these to get them soft, I found that the Indo-European brand has the best ready to use\u00a0garbanzo\u00a0bean, you can also soak and pressure cook dried chick peas)<br \/>\n1\u00a0teaspoons jhal moodi masala<br \/>\n1 teaspoon black salt<br \/>\nChopped cilantro<br \/>\nSqueeze of lemon or lime<\/p>\n<ol>\n<li>Boil and mash the potatoes.<\/li>\n<li>Drain and rinse the chick peas.<\/li>\n<li>Mix both with jhal moodi masala and black salt.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">Putting it Altogether<\/span><br \/>\nStore bought puris<br \/>\nFilling<br \/>\nFinely diced onions (optional-I&#8217;m an onion nut)<br \/>\nTamarind data chutney thinned down with water<br \/>\nWater<\/p>\n<ol>\n<li>Punch a hole in the top of a puri.<\/li>\n<li>Add a little filling.<\/li>\n<li>Add a little onion if you like it that way.<\/li>\n<li>Add a little chutney if you like it a little sweet (you can add this individually to your spicy water bowl too).<\/li>\n<li>Add the water.<\/li>\n<li>Eat!<\/li>\n<\/ol>\n<div class=\"social-likes social-likes_notext\" data-title=\"Pani Puri\" data-url=\"https:\/\/mayabugs.com\/blog\/pan-puri\/\" data-counters=\"yes\"><div class=\"facebook\" title=\"Share link on Facebook\"><\/div><div class=\"plusone\" title=\"Share link on Google+\"><\/div><div class=\"twitter\" data-via=\"mayabugs\" title=\"Share link on Twitter\"><\/div><div class=\"pinterest\" title=\"Share image on Pinterest\" data-media=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Pani-Puri-1024x768.jpg\"><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>Pani Puri is the oddest little snack.
