I just think this simple avocado pasta is so lovely! I was inspired by this recipe on Damn delicious<\/a>. The avocados make it so creamy and the parmesan give it a little nuttiness, and the roasted grape tomatoes, yum!<\/p>\n

My husband suggested adding nuts, so next time I will add a little toasted pine nuts to the top. I think it would add an extra lovely component!<\/p>\n

8 ounces grape or other small tomato sliced in half
\n1 tablespoon olive oil
\nSalt
\n8 ounces spaghetti
\nHandful of basil leaves
\n2-3 garlic cloves
\n2 avocados
\n1\/4 cup grated parmesan cheese
\nJuice from 1 lemon
\nSalt & fresh ground pepper
\nToast pine nuts (optional)<\/p>\n

  1. Toss the tomatoes with the olive oil and salt and bake for 25-30 minutes in a 375 degree oven.<\/li>\n
  2. Boil spaghetti according to direction on the package.<\/li>\n
  3. In a food processor, add the basil, garlic,\u00a0avocados, parmesan cheese, and lemon juice and blend until smooth. Add salt and fresh ground pepper to taste and blend in.<\/li>\n
  4. Toss the spaghetti with the avocado sauce and top with roasted tomatoes and maybe even some toasted pine nuts. Ooo la la.<\/li>\n<\/ol>\n
