I&#8217;ll see an interesting ingredient in a recipe, jot it down without reference the recipe, pick it up, and then have no clue where to use it. I need to make some kind of note as to what recipe\/s it is for. Well, I finally used one of those ingredients, candlenuts! They have been sitting in our cupboard unopened for ages. But finally&#8230;a few of them found there home in this Malaysian coconut stew, Sayur lodeh.<\/p>\n<p>Now, tell me, next where should I use those preserved lemons? \ud83d\ude42<\/p>\n<p>Sayur lodeh is a vegetable stew with coconut milk that has versions in Malaysian and Indonesian cooking. The recipes I used to come up with mine (<a title=\"Sayur Lodeh Recipe\" href=\"http:\/\/fatboo.com\/2014\/07\/sayur-lodeh-recipe-malay-vegetable-curry.html\" target=\"_blank\">fatboo.com <\/a>and <a title=\"Sayur Lodeh\" href=\"http:\/\/kampungsingapura.com\/malay-food-recipes\/sayur-lodeh\" target=\"_blank\">kampungsingapura.com<\/a>)\u00a0were Malaysian, but\u00a0then used tempeh instead of tofu which is a more Indonesian ingredient. The only tofu we had was the super soft Korean kind for <a title=\"Soondubu Jjigae (Korean Tofu Stew)\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/soondubu-jjigae-korean-tofu-stew\/\" target=\"_blank\">soon tofu<\/a> and I didn&#8217;t think it would go.\u00a0The first added the Indian elements of mustard seeds and curry leaves, but I left them off this time.<\/p>\n<p>I generally keep galangal, lemongrass and Thai red chilis in the freezer. They keep pretty well and are much better than dried varieties. Of course, fresh is always best, but we aren&#8217;t super close to any Asian markets, boo hoo!<\/p>\n<p>I would say my only complaint about this stew is that it is hard to get the galangal and lemongrass really smooth in the paste so there is a little\u00a0bit of a grainy texture. Any ideas?\u00a0Maybe it takes more oil?<\/p>\n<p><span style=\"text-decoration: underline;\">Paste<br \/>\n<\/span> 1\/4 red onion chopped (shallots are traditional, but I don&#8217;t always keep them around)<br \/>\n4 garlic cloves sliced\\<br \/>\n1 knob ginger minced<br \/>\n1 knob galangal minced<br \/>\n2 lemon grass stocks, just the soft inside part<br \/>\n2-3 fresh Thai red chiles chopped<br \/>\n5 candlenuts<br \/>\n2 tablespoons <a title=\"Fermented Soybean (Great Ingredient!)\" href=\"http:\/\/mayabugs.com\/blog\/ingredients\/store-bought-ingredients\/fermented-soybean-great-ingredient\/\" target=\"_blank\">fermented soy beans<\/a>\u00a0or vegetable bouillon<\/p>\n<p><span style=\"text-decoration: underline;\">Other Ingredients<br \/>\n<\/span>2-3 tablespoons coconut oil<br \/>\n1 tablespoon more coconut oil (for frying the tempeh)<br \/>\n1\/2 package tempeh cut into squares (about 4 ounces, you can totally use the whole package, but we like\u00a0a higher veggie ratio)<br \/>\n1\/2 tablespoon turmeric<br \/>\n1\/4 teaspoon chili powder<br \/>\n1 mediumish potato chopped<br \/>\n2 carrots chopped<br \/>\n2 cups water<br \/>\nSalt<br \/>\n1 big handful of green beans cut into inch long lengths<br \/>\n1\/4 of a cabbage cut into 4ths<br \/>\n1\/2 can coconut milk (about a cup)<\/p>\n<ol>\n<li>Grind all the paste ingredients with a little water until as smooth as you can get it.<\/li>\n<li>Heat coconut oil in a saute pan and cook the paste until the raw smell goes away (this takes a while and needs to be stirred often so it doesn&#8217;t burn!). Add more coconut oil if it sticks too much.<\/li>\n<li>Meanwhile, in another pan, fry the tempeh in the rest of the coconut oil and set aside.<\/li>\n<li>To the paste, add the turmeric, chili powder, potato, carrots, water and salt. Cook for a few minutes, then add the green beans. Once the potatoes, carrots and green beans are almost cooked, add the cabbage and coconut milk.
