It goes well with pooris, Indian unleavened fried bread and the combination is\u00a0often called poori bhaji. It is onion and garlic free like a lot of Gujarati cooking.<\/p>\n<p>I had found a different recipe for Kerala style poori bhaji a while back which I have Pinned and want to make one day\u00a0and\u00a0when I mentioned it to Tejas, he said there was a Gujarati version too. Last night a Gujarati version\u00a0sounded so good so I gave it a go. The recipe I used as a guide is here:\u00a0<a title=\"Poori Bhaji\" href=\"http:\/\/maayeka.blogspot.com\/2013\/10\/poori-bhaji-raswala-bateta-nu-shaak.html?m=1\" target=\"_blank\">maayeka poori bhaji<\/a>. I also made the <span style=\"color: #000000;\"><a title=\"Gujarati Stir Fried Carrots\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/gujarati\/gujarati-stir-fried-carrots\/\" target=\"_blank\">stir fried carrots<\/a> t<\/span>he blogger posted as an\u00a0accompaniment\u00a0for\u00a0poori bhaji and they were to die for! Who knew carrots could be so yummy! I&#8217;ll post that recipe soon.<\/p>\n<p>I didn&#8217;t quite nail the pooris (fried flatbread) this time, but loved the potato curry that went with them. In general, I&#8217;m not very good with breads so I wasn&#8217;t surprised \ud83d\ude42<\/p>\n<p>Don&#8217;t be put off by the number of ingredients, most are spices and added close together. It&#8217;s not a lot of chopping or anything.<\/p>\n<p>2 tablespoons olive oil<br \/>\n1 teaspoon mustard seeds<br \/>\n1\/4 teaspoon fenugreek seeds<br \/>\n1 tablespoon urad dal<br \/>\n2-3 green chilis chopped<br \/>\n2 cloves<br \/>\n1 piece cinnamon bark<br \/>\n1 bay leaf<br \/>\nA few red chilis<br \/>\n7-8 curry leaves<br \/>\nPinch hing<br \/>\n4 potatoes chopped into small pieces<br \/>\n1 teaspoon turmeric<br \/>\n1 teaspoon chili powder<br \/>\n1 teaspoon coriander powder<br \/>\n2 teaspoons minced ginger<br \/>\n1 tablespoon natural tamarind paste<br \/>\n2 tablespoons jaggery<br \/>\n3-4 cups water<br \/>\nSalt<\/p>\n<ol>\n<li>Heat oil in a saute or sauce pan and add mustard seeds. Once they start to pop add the fenugreek, urad dal, and green chilis. Once the urad dal starts to brown, add the cloves, cinnamon and bay leave.
