This dip of black beans, corn and feta is such a quick and amazing picnic dish! My friend Lily brought it to a potluck we had a while back and I just got the recipe. It does make quite a bit. If you only have a few people, I would halve\u00a0the recipe.<\/p>\n

2 cans black beans drained and rinsed
\n3\/4 package frozen corn defrosted
\n1 8 ounce block feta cheese crumbled
\n2 bunches green onions chopped
\n1\/2 cup olive oil
\n1\/2 cup apple cider vinegar
\n1\/3 cup sugar
\nSalt
\nFritos or tortilla chips<\/p>\n

  1. Mix everything together and let sit for a while to let the flavors meld!<\/li>\n
  2. Serve with Fritos or tortilla chips.<\/li>\n<\/ol>\n
