Like,<a title=\"Kimchi Bibimguksu (Korean Cold Spicy Noodles w\/ Kimchi)\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/kimchi-bibimguksu-cold-spicy-mixed-noodles-w-kimchi\/\"><span style=\"color: #000000;\"> kimchi bibimguksu<\/span><\/a>, these Korean noodles are flavorful, cool, refreshing and not too heavy. There are two names I came across for these noodles:\u00a0bibim guksu and bibim naengmyeon and through a little research and some fun reading (<a title=\"difference between bibim naengmyun bibim guksu\" href=\"http:\/\/mykoreankitchen.com\/2007\/06\/03\/difference-between-bibim-naengmyun-and-bibim-guksu\/\" target=\"_blank\">here<\/a>\u00a0and <a title=\"Slurp! Tasty Korean cold noodles\" href=\"http:\/\/blog.korea.net\/?p=4122\" target=\"_blank\">here<\/a>\u00a0and <a title=\"noodle\" href=\"http:\/\/www.lifeinkorea.com\/food\/food.cfm?Subject=noodle\" target=\"_blank\">here<\/a>), I think\u00a0naengmyeon are cold noodles, chewy and made out of buckwheat and other starches, and\u00a0guksu are wheat noodles that could have buckwheat in them, but are not chewy. Since I used soba which are definitely not chewy, I think we&#8217;ll call this bibim\u00a0guksu. But really, I&#8217;m not sure!<\/p>\n<p>Anyways, the noodles are mixed with a gochujang sauce which is <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=IQDXJYAF4RAG43J7\" rel=\"nofollow\">gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>(a Korean hot pepper paste made from rice, chilis, soybeans and salt-you can get it at a Korean market or even on\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=IQDXJYAF4RAG43J7\" rel=\"nofollow\">Amazon<\/a>)\u00a0mixed with vinegar, soy sauce and sesame oil, etc. and topped with cucumber and hard boiled eggs. We didn&#8217;t have cucumber and while sometimes I get a little crazy and pick up every possible ingredient I might need, I didn&#8217;t feel like it this day and went with a substitute of carrots and cabbage.<\/p>\n<p><a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=IQDXJYAF4RAG43J7\" rel=\"nofollow\">Gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>(Korean chili paste) is really necessary in these noodles. I can&#8217;t think of any suitable substitute. Gochujang\u00a0is a great item to stock and it lasts forever which is great if you only cook Korean dishes once in a while. I get it in a plastic container that doesn&#8217;t seal great, so I transfer it to a glass jar to keep in the fridge.<\/p>\n<p>This recipe is adapted from\u00a0<a title=\"spicy sweet and vinegary noodles bibim guksu\" href=\"http:\/\/mykoreankitchen.com\/2007\/05\/29\/spicy-sweet-and-vinegary-noodles-bibim-guksu\/\" target=\"_blank\">My Korean Kitchen<\/a>.<span style=\"line-height: 1.5em;\">\u00a0<\/span><\/p>\n<p>2 eggs<br \/>\n1 tablespoon toasted sesame seeds<br \/>\n2 tablespoons <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=IQDXJYAF4RAG43J7\" rel=\"nofollow\">gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/> (Korean chili paste)<br \/>\n2 tablespoons rice vinegar<br \/>\n2 tablespoons soy sauce<br \/>\n1 tablespoon honey<br \/>\n1 tablespoon brown sugar<br \/>\n1 tablespoon sesame oil<br \/>\nCucumbers sliced into matchsticks (I used carrots and cabbage since we didn&#8217;t have cucumbers)<br \/>\n6 ounces buckwheat or soba noodles<\/p>\n<ol>\n<li>Boil eggs, let cool, peel and cut into long 4ths.<\/li>\n<li>Toast the sesame seeds until brown and fragrant, let cool.<\/li>\n<li>Mix together the rice vinegar, soy sauce, honey, brown sugar, and sesame oil.<\/li>\n<li>Boil the buckwheat noodles according to the package directions.
