I created this ginger and five spice carrot soup as an accompaniment to BBQ 5 Spice Sandwiches<\/a>. It is super creamy and sweet without the addition of any cream or sugar! This recipe makes 4 little side bowls of soup.<\/p>\n

2 tablespoons olive oil
\n1 red onion sliced
\n2 garlic cloves chopped (bigger pieces keep the garlic from cooking fast and getting bitter)
\n2 tablespoons chopped ginger
\n1 pound carrots peeled and chopped
\n1 teaspoon Chinese 5 Spice
\n3 cups water
\nSalt
\nMore water as needed<\/p>\n

  1. Heat olive oil in a saute or sauce pan and add onions. Cook over medium heat until soft, browned a little, and translucent, adding the garlic and ginger half way through cooking the onions.<\/li>\n
  2. Add the carrots, 5 spice and water and boil until the carrots\u00a0are super tender.<\/li>\n
  3. Blend in a blender, add salt to taste and more water if needed or to get the consistency you would like.<\/li>\n<\/ol>\n
