I may want to cook with it.&#8221; I rarely cook with wine, so I&#8217;m not sure what I was keeping it for. I don&#8217;t even know how long wine keeps in the fridge for cooking purposes. Anyways, now I know why I was keeping it around! Mushroom bourguignon! So perfect for the cozy rainy weather we are having right now in Los Angeles!<\/p>\n<p>This recipe is adapted from <a title=\"mushroom bourguignon\" href=\"http:\/\/smittenkitchen.com\/blog\/2009\/01\/mushroom-bourguignon\/\" target=\"_blank\">mushroom bourguignon<\/a>\u00a0on my favorite blog <a title=\"smitten kitchen\" href=\"http:\/\/smittenkitchen.com\/\" target=\"_blank\">Smitten Kitchen.<\/a>\u00a0It\u00a0is rich, mushroomy and delicious. I needed quite a bit more liquid and used less mushrooms, but I&#8217;m guessing it is because I had the fire up higher. We had mushroom bourguignon with garlic mashed potatoes. Yummy.<\/p>\n<p>1 tablespoon butter<br \/>\n1 pound mushrooms (portobello, crimini, white, shiitake all work)<br \/>\n1 tablespoon olive oil<br \/>\n1 small carrot chopped<br \/>\n1 onion chopped<br \/>\n2 garlic cloves<br \/>\n1\/2 teaspoon thyme<br \/>\n1\/2 teaspoon sage<br \/>\nFresh ground pepper<br \/>\nSalt<br \/>\n1 cup red wine<br \/>\n2 tablespoons tomato paste<br \/>\n3-4 cups mushroom broth (I used\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/B002FYG300\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002FYG300&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=N3ZHLORIJZAXORFC\" rel=\"nofollow\">Pacific Natural Foods Organic Mushroom Broth<\/a>, you could also use 1 tablespoon <a href=\"http:\/\/www.amazon.com\/gp\/product\/B00016LA98\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B00016LA98&amp;linkCode=as2&amp;tag=mayabugs-20&amp;linkId=E64LC4LNP4ONDSKF\" rel=\"nofollow\">Better than Bouillon Mushroom Base<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B00016LA98\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002FYG300\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>and water)<br \/>\n1 tablespoon butter<br \/>\n1 tablespoon flour<\/p>\n<ol>\n<li>Melt butter in a big saute pan over medium high heat and saute the mushrooms until they brown and are just starting to let out liquid. Remove from heat.<\/li>\n<li>In the same pan heat the oil and saute the carrots and onions until the onions start to brown, adding the garlic, thyme, sage, pepper, and a little salt near the end.\u00a0Add the wine and reduce by half. Then add 3 cups of the mushroom broth (or bouillon and 3 cups water) and the mushrooms and cook for 15-20 minutes. If you think you need more liquid, add another cup of broth or water. You want enough liquid so it is &#8220;stewy&#8221;.<\/li>\n<li>Mix the butter and flour together and stir into the stew to thicken.
