We had these kimchi noodles with some dumplings from Trader Joe&#8217;s for an easy dinner\u00a0(they have a new mochi mushroom one that is so good!).<\/p>\n<p><a href=\"http:\/\/www.amazon.com\/gp\/product\/B007W0D0LM\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B007W0D0LM&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Somen or somyeon noodles<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B007W0D0LM\" width=\"1\" height=\"1\" border=\"0\" \/>are thin wheat noodles used in Japan and Korea. I happened to have some fresh from my last trip to a Korean market so I used those. One day I want to post all the Asian noodles I&#8217;ve come across and dissect them because they are all so different. I think this would be a pretty big project! One day&#8230;<\/p>\n<p><a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" width=\"1\" height=\"1\" border=\"0\" \/>is a Korean hot pepper paste made from rice, chilis, soybeans and salt. If you plan to cook Korean food it is a must! You can get it at a Korean market or even on <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Amazon<\/a>.<\/p>\n<p>Sesame seeds are so much better freshly toasted. I buy untoasted and then toast them, but even if they come toasted, a fresh toast in a pan is always a good idea. My trick these days for not burning them (I don&#8217;t know how many times I&#8217;ve had to throw out a pan of sesame seeds) is to set the pan over mediumish heat and set the oven timer on 1 minute. I shake the pan after each minute goes off and it only takes a few times.<\/p>\n<p>If you like this dish of cold Kimchi noodles, try these\u00a0<a title=\"Cold Sesame Soba Noodles\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/cold-sesame-soba-noodles\/\" target=\"_blank\">Cold Sesame Soba Noodles<\/a>\u00a0and\u00a0<a title=\"Sesame Soy Kelp Noodle Salad\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/sesame-soy-kelp-noodle-salad\/\" target=\"_blank\">Sesame Soy Kelp Noodle Salad<\/a>\u00a0too!<\/p>\n<p>Recipe adapted from <a title=\"kimchi bibimguksu spicy cold noodle\" href=\"http:\/\/messywitchen.com\/recipe\/korean-recipe\/kimchi-bibimguksu-spicy-cold-noodles\/\" target=\"_blank\">Messy Witchen<\/a>.<\/p>\n<p>1 egg<br \/>\n1 tablespoon + 1 teaspoon sesame seeds<br \/>\n1\/2 cup kimchi chopped<br \/>\n1\/6-1\/3 cup kimchi juice (I could only get 1\/6 cup out of the jar)<br \/>\n1 clove garlic minced<br \/>\n1 teaspoon sugar<br \/>\n1 teaspoon <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" width=\"1\" height=\"1\" border=\"0\" \/> (Korean hot pepper paste)<br \/>\n2 teaspoons sesame oil<br \/>\n2 teaspoons rice vinegar<br \/>\n2 servings fresh or dried somen\/somyeon noodles<br \/>\n1 small cucumber cut into matchsticks<\/p>\n<ol>\n<li><span style=\"line-height: 1.5em;\">Boil the egg, cool, peel and cut into fourths.<\/span><\/li>\n<li>Toast the sesame seeds.<\/li>\n<li>Mix together the kimchi, as much kimchi juice as you can get up to 1\/3 cup, garlic, sugar, gochujang, sesame oil, vinegar and most of the toasted sesame seeds (save some for a garnish).<\/li>\n<li>Boil the noodles according to the package directions.
