We keep a box of Gits Rice Idli Mix because they come out so fluffy and are so quick to make!<\/p>\n<p>Try them with this <a title=\"Sambar\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/idli-sambhar\/\" target=\"_blank\">sambar <\/a>or this <a title=\"Quick Sambar\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/quick-sambar\/\" target=\"_blank\">sambar<\/a>!<\/p>\n<p>1 big box dried idli mix (500gm)<br \/>\n3 3\/4 cup water<br \/>\n2 teaspoons enu (fruit salt, it makes the idlis really fluffy!)<br \/>\nOil<\/p>\n<ol>\n<li>Mix idli mix with water and let sit for 10 minutes.<\/li>\n<li>Boil an inch of water in a pressure cooker.<\/li>\n<li>Grease idli stand with a little oil.<\/li>\n<li>Add enu to idli batter and stir.<\/li>\n<li>Ladle idli batter into idli stand, put into pressure cooker without the weight (so it will steam).<\/li>\n<li>Cook for 15 minutes.<\/li>\n<li>Let sit for a few minutes to let the steam exit so the idlis don&#8217;t get wet.<\/li>\n<li>Serve with sambhar and coconut chutney.
