Look at the luscious avocados, so smooth and creamy next to a good spread of pesto! I decided to make a pesto using basil, green onions, kale, blue cheese, and walnuts and it was a great compliment to the creamy avocado.<\/p>\n<p><span style=\"text-decoration: underline;\">Blue Cheese Pesto (or use your favorite pesto!)<\/span><br \/>\n1 garlic clove<br \/>\n1\/2 cup fresh basil<br \/>\n2 green onions (green part only)<br \/>\nBig handful kale<br \/>\n1 ounce crumbled blue cheese<br \/>\n1\/4 cup walnuts<br \/>\nSalt<br \/>\n2 tablespoons olive oil<\/p>\n<ul>\n<li>Throw garlic in a food processor until minced. Add the basil, green onions, and kale and mince. Add in the blue cheese, walnuts and salt and pulse a few times. Salt to taste. Pulse, while drizzling in the olive oil.<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Per Sandwich<\/span><br \/>\n2 slices whole wheat bread<br \/>\n1 slice cheese (I used white cheddar)<br \/>\n1\/2 avocado sliced<br \/>\nSalt<br \/>\nPesto<br \/>\nOlive oil<\/p>\n<ol>\n<li>Lay a slice of cheese on one slice of bread. Add sliced avocado and sprinkle with salt. Lather the pesto on the other slice and lay it on top making a sandwich.<\/li>\n<li>Heat a little olive oil in a pan.
