This version is made with onions, potatoes and peas. For some reason I was kind of intimidated to make it because I didn&#8217;t know how the flattened rice was cooked, but it was so easy! The flattened rice can be found at an Indian market and you just so soak it before adding to the pan. Use either thick poha or dagdi poha, not thin.<\/span><\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/poha-flattened-rice-with-potatoes-peas\/attachment\/poha-dagdi\/\" rel=\"attachment wp-att-5234\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5234\" alt=\"Poha Dagdi\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-Dagdi.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-Dagdi.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-Dagdi-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-Dagdi-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p><a style=\"line-height: 1.5em;\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/poha-flattened-rice-with-potatoes-peas\/attachment\/poha-2\/\" rel=\"attachment wp-att-5201\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5201\" alt=\"Poha 2\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-2.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-2.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-2-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/11\/Poha-2-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p>1 &amp; 1\/2 cups thick or dagdi poha (I used dagdi)<br \/>\n1 small potato cut into cubes<br \/>\n2 tablespoons olive oil<br \/>\n1\/2 teaspoon mustard seeds<br \/>\n1\/2 teaspoon cumin seeds<br \/>\n2-3 green chilis sliced lengthwise<br \/>\n6-7 curry leaves<br \/>\nPinch of hing (asafoetida)<br \/>\n1 onion chopped<br \/>\n1\/2 cup peas (if frozen, put in water to thaw)<br \/>\n1\/2 teaspoon turmeric powder<br \/>\n1-2 teaspoons sugar<br \/>\nSalt<br \/>\nJuice from 1\/2 lemon<br \/>\nCilantro for garnish<\/p>\n<ol>\n<li>Rinse the poha well and soak in water for 10 minutes, then drain well.<\/li>\n<li>Meanwhile boil the potatoes in salted water until tender.<\/li>\n<li>Heat oil in a saute pan and add the mustard and cumin seeds. Once the mustard seeds start to pop, add the green chilis, curry leaves, and hing and cook for another few seconds. Add the onions and saute until translucent.<\/li>\n<li>Add the drained poha, potatoes, peas, turmeric, sugar, salt and lemon juice, and stir.
