My old one was just too complicated&#8230;This recipe for dan dan noodles uses mushrooms in stead of pork and is really pretty simple to make.<\/p>\n<p>Dandan noodles are a traditional Sichuan noodle dish made with chili oil, sichuan peppercorns, preserved vegetables, and sometimes sesame paste.\u00a0I absolutely loved it, but I will confess that my husband, Tejas, was not a fan of the sichuan peppercorns, too bitter :-\/.\u00a0Sichuan peppercorns are so odd, they are peppery and a little bitter, and leave your mouth numb. I&#8217;m really starting to like them!<\/p>\n<div><span style=\"text-decoration: underline;\">Sauce<\/span><\/div>\n<div>2 tablespoons soy sauce<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12015\">1 tablespoon Chinese cooking wine<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12083\">3 tablespoons chili oil<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12072\">2 teaspoon sesame oil<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12071\">1 tablespoon Asian sesame paste<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12070\">1 Trader Joe&#8217;s frozen garlic cube (or 1-2 cloves garlic minced)<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12128\">1 teaspoon minced ginger<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_7188\">1\/2 cup vegetable broth (I used water and 2 teaspoons\u00a0Better than Bouillion Mushroom Base)<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12069\">2 teaspoons sichuan peppercorns ground<\/div>\n<div>\n<ul>\n<li><span style=\"line-height: 13px;\">Mix all ingredients together in a small skillet and heat up.<\/span><\/li>\n<\/ul>\n<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12088\"><span style=\"text-decoration: underline;\">Mushroom Dan Dan Noodles\u00a0<\/span><\/div>\n<div id=\"yui_3_7_2_1_1380908187682_14751\">1-2 teaspoons olive oil<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12085\">1\/4-1\/2 cup pickled mustard greens chopped into little pieces<\/div>\n<div id=\"yui_3_7_2_1_1380908187682_12068\">16 ounces mushrooms chopped<br \/>\nSalt<br \/>\n4-6 ounces Asian wheat noodles<br \/>\nPeanuts crushed for garnish<br \/>\nGreen onions slice for garnish<\/div>\n<div>\n<ol>\n<li><span style=\"line-height: 13px;\">Heat olive oil in a skillet and add the pickled mustard greens.
