I loved it on idlis at my mother in laws in Bangalore.\u00a0It is made of a combination of urad dal, channa dal, red chilis and various other ingredients can be added. I made podi two ways this morning, once with garlic and once with sesame seeds.<\/p>\n<p>I didn&#8217;t give an amount for the red chilis because they can vary in size so much. I used 1-2 tablespoons of these little dried red chilis, but usually you can&#8217;t fit dried red chilis in a tablespoon! Always make sure to let the dry ingredients you toast cool before grinding. The cooling dries them out.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/idli-podi-two-ways-garlic-podi-sesame-seed-podi\/attachment\/garlic-idli-podi\/\" rel=\"attachment wp-att-4972\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4972\" alt=\"Garlic Idli Podi\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/09\/Garlic-Idli-Podi.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/09\/Garlic-Idli-Podi.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/09\/Garlic-Idli-Podi-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/09\/Garlic-Idli-Podi-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p><strong>Garlic Idli Podi<br \/>\n<\/strong><em>Adapted from <a title=\"Tannish Kitchen Idli Podi\" href=\"http:\/\/www.tanishkitchen.com\/2013\/04\/how-to-make-idli-podi-recipe-for-idly.html\" target=\"_blank\">Tannish Kitchen<br \/>\n<\/a><\/em>6 garlic cloves skin on<br \/>\n2 tablespoons channa dal<br \/>\n1\/4 cup urad dal<br \/>\nRed chilis to taste<br \/>\n1\/4 teaspoon hing (asafoetida)<br \/>\nSalt<\/p>\n<ol>\n<li>In a skillet dry roast the garlic cloves in their skin until tender and browned on the outside. Peel.<\/li>\n<li><span style=\"line-height: 13px;\">In the same skillet dry toast the four ingredients separately or all together if you&#8217;re very careful. To roast altogether, start by adding the channa dal to the pan. Stir constantly. Once they get a little color, add the urad dal and red chilis. Keep stirring and once the the dal is golden, remove from heat and let cool.<\/span><\/li>\n<li>Grind with the hing and a little salt.
