I&#8217;m so glad too because it came out really nice! I used <a title=\"Serious Vegetarian Gumbo\" href=\"http:\/\/www.whatwouldcathyeat.com\/2011\/04\/serious-vegetarian-gumbo\/\" target=\"_blank\">this recipe<\/a>\u00a0with okra instead of the mushrooms. I just love okra in gumbo! I added a tomato too because I really like the freshness tomato gives a stew.<\/p>\n<p>I used ghee instead of oil and ended up burning my first batch of roux using the oven method. So on the second try I turned down the oven temperature, but it was taking sooo long, so I finished it on the stove. And I will say that I didn&#8217;t get as dark a roux as I would have liked, but I still think it tasted great.<\/p>\n<p>For the protein I added a couple of Field Roast Mexican Chipotle sausages made from seitan (wheat meat) and some veggie ham I had in the freezer from the 99 Ranch.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/american-recipes\/vegetarian-gumbo-w-okra\/attachment\/vegetarian-gumbo-1\/\" rel=\"attachment wp-att-4747\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4747\" alt=\"Vegetarian Gumbo 1\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gumbo-1.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gumbo-1.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gumbo-1-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gumbo-1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a> <a href=\"http:\/\/mayabugs.com\/blog\/american-recipes\/vegetarian-gumbo-w-okra\/attachment\/vegetarian-gum2o-1\/\" rel=\"attachment wp-att-4746\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4746\" alt=\"Vegetarian Gum2o 1\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gum2o-1.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gum2o-1.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gum2o-1-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/08\/Vegetarian-Gum2o-1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p>1\/2 cup ghee or clarified butter<br \/>\n1\/2 cup flour<br \/>\n2-3 onions chopped<br \/>\n3 celery stalks chopped<br \/>\n2 green bell peppers<br \/>\n4-5 garlic cloves sliced<br \/>\n1 tomato chopped (optional)<br \/>\n1\/2 pound okra cut into crosscut pieces<br \/>\n1 teaspoon dried thyme<br \/>\n1 teaspoon dried oregano leaves<br \/>\n1\/2 teaspoon chili powder<br \/>\n1 teaspoon smoked paprika<br \/>\n3 bay leaves<br \/>\nSalt<br \/>\n4 cups water or vegetable stock<br \/>\n1 tablespoon vegetarian worcestershire sauce<br \/>\n1 teaspoon olive oil<br \/>\n2 vegetarian sausages sliced (I used Field Roast Mexican Chipotle)<br \/>\nVeggie ham (or 2 more sausages)<br \/>\nRice cooked (I used Jamine)<br \/>\nGumbo file<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Melt ghee in a big heavy bottomed pot (I used a\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/B000N501BK\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B000N501BK&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">dutch oven like this one<\/a>). Stir in the\u00a0flour until smooth. Continue to cook stirring often until the roux is a dark brown. How high your heat is will determine how much you have to stir. If you have it on low you don&#8217;t have to stir it quite as often. The hotter the flame the more you have to stir. This can take a really long time, so patience is key.<\/span><\/li>\n<li>Add onions, celery, and bell pepper to the roux and cook stirring often until the onions soften, adding the garlic part way through cooking.<\/li>\n<li>Add the tomatoes and okra and cook for a couple of minutes.<\/li>\n<li>Add the thyme, oregano, smoked paprika and bay leaves, and stir for another minute or so.<\/li>\n<li>Add the salt, water, worcestershire and cook over medium low heat for about 30 minutes, stirring occasionally.<\/li>\n<li>In another skillet heat the oil and cook the sausages until browned.
