I based my recipe on <a title=\"Sailu's Kitchen Gobi Manchurian\" href=\"http:\/\/www.sailusfood.com\/2009\/01\/12\/gobi-manchurian\/?print=1\" target=\"_blank\">Sailu&#8217;s Kitchen blog<\/a> and <a title=\"Show Me The Curry Gobi Manchurian\" href=\"http:\/\/showmethecurry.com\/appetizers\/gobi-cauliflower-manchurian-dry.html\" target=\"_blank\">Show Me the Curry<\/a>.<\/p>\n<p>We wanted it with quite a bit of gravy and while delicious, the fried cauliflower wasn&#8217;t quite as crisp as I would have liked. To fry the cauliflower without using too much oil, I did multiple batches. The last batch stayed the crispiest, so next time I might try doing them all at once in a bigger pan, toss quickly and eat right away! Or maybe even making a thicker batter would work. But the light crisp batter is so yummy.<\/p>\n<p>I used olive oil which I hear different ideas about its use in frying. From what I have read though, monounsaturated should be safer to fry with than polyunsaturated. The best would probably be coconut oil.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/gobi-manchurian-indian-chinese-appetizer\/attachment\/gobi-manchurian-2\/\" rel=\"attachment wp-att-4526\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4526\" title=\"Gobi Manchurian 2\" alt=\"\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-2.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-2.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-2-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-2-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/gobi-manchurian-indian-chinese-appetizer\/attachment\/gobi-manchurian-1\/\" rel=\"attachment wp-att-4525\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4525\" title=\"Gobi Manchurian 1\" alt=\"\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-1.jpg\" width=\"3648\" height=\"2736\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-1.jpg 3648w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-1-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2013\/06\/Gobi-Manchurian-1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 3648px) 100vw, 3648px\" \/><\/a><\/p>\n<p>1 1\/2 pounds cauliflower broken into florets<br \/>\n1\/4 cup flour<br \/>\n1\/4 cup cornstarch<br \/>\n2 tablespoon rice flour<br \/>\nSalt<br \/>\n7-8 tablespoons water<br \/>\n2 tablespoons soy sauce<br \/>\n1 tablespoon + 1 teaspoon white vinegar<br \/>\n4 tablespoons <a href=\"http:\/\/www.amazon.com\/gp\/product\/B004XTDK38\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B004XTDK38&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Maggi Hot &amp; Sweet Tomato Chilli Sauce<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B004XTDK38\" width=\"1\" height=\"1\" border=\"0\" \/><br \/>\n4 tablespoons ketchup<br \/>\n2 teaspoons Kasmiri chili powder (redder and less spicy than normal chili powder-if you don&#8217;t have it use less normal chili powder or skip)<br \/>\n1 tablespoon palm sugar (or brown sugar)<br \/>\n1 tablespoon sesame oil<br \/>\n2 garlic cloves chopped<br \/>\n1 piece ginger minced<br \/>\n1\/2 onion chopped<br \/>\n1\/2-3\/4 cup water (depending on how dry you want it)<br \/>\n1 teaspoon cornstarch mixed in a little water<br \/>\nOil for deep frying<br \/>\n2 green onions chopped<\/p>\n<ol>\n<li>Boil a pot of water with some salt, turn off the heat and add cauliflower. Drain after 10 minutes.<\/li>\n<li>Mix flour, cornstarch, rice flour, \u00a0a little salt and water together. Toss with the cauliflower.<\/li>\n<li>Mix together the sauce ingredients: soy sauce, vinegar, tomato chili sauce, ketchup, chili powder, and brown sugar.<\/li>\n<li>Heat sesame oil in a saute pan. Add garlic and ginger and cook for a few seconds. Add onions and cook until translucent.<\/li>\n<li>Throw in the sauce and water and bring to a boil. Add the water and cornstarch mixture, bring back to a boil then reduce heat to low while frying the cauliflower.<\/li>\n<li>Right before you&#8217;re ready to serve, heat oil for deep frying.
