Souplantation has the most amazing salad with broccoli, raisins and cashews in a coleslaw dressing. I am not a big raw broccoli fan, \u00a0but I love this salad! This is vegetarian version that omits the bacon. You could add tempeh bacon which I didn’t have at the time.\u00a0I blanch the broccoli to take away the raw taste, but they should still be crunchy. I also added yellow bell pepper.<\/p>\n

2-3 tablespoons mayonnaise\u00a0(full fat! I made my own for this, but I think I like Best Foods better :-))
\n1 tablespoon palm sugar (regular sugar is fine too)
\n2-3 cups broccoli cut into little florets
\n1\/2 yellow bell pepper chopped
\n1\/4 red onion chopped
\n1\/4 cup raisins
\n1\/4 cup cashews toasted<\/p>\n

  1. Mix mayo and sugar together so that the sugar melts into the mayo.<\/li>\n
  2. Blanch the broccoli by throwing broccoli into boiling water for just a minute or two. Drain.<\/li>\n
  3. Throw all the ingredients together and serve.<\/li>\n<\/ol>\n
