Back in the dorms at UCLA oh so long ago, one of my best friends was\u00a0vegetarian and\u00a0would make these amazing simple quesadillas in the\u00a0cafeteria. When I made them once for my husband, he was impressed and it was then that I realized that not all quesadillas were made equal! Yesterday I was totally craving some cheesy goodness, so I whipped up some veggie quesadillas. These are a little more complicated, but really simple enough.<\/p>\n

These veggie quesadillas go great with sour cream and salsa. Here are a couple of homemade salsa recipes that I have posted in the past: tomatillo salsa<\/a>\u00a0and\u00a0smokey tomato salsa<\/a>.\u00a0If you want to make your own flour tortillas, here is a good recipe for flour tortillas<\/a>.<\/p>\n

1 teaspoon oil
\nA few slices of bell pepper (red or green)
\nA few slices of onions
\nSalt
\nMedium to large flour tortillas
\nSharp cheddar cheese grated (jack might be more traditional, but I love cheddar!)
\nChopped cilantro
\nSour cream & salsa!<\/p>\n

  1. Heat the oil in a skillet and saute the bell pepper and onions on high stirring constantly. I generally add the bell pepper slightly before the onions since onions take less time to cook.<\/li>\n
  2. Lay out a flour tortillas and sprinkle half with cheese.<\/li>\n
  3. Add the bell peppers and onions and cilantro.<\/li>\n
  4. Top with another sprinkling of cheese (sandwiching in the veggies keeps the quesadilla held together since the cheese sticks to the tortilla on both sides).<\/li>\n
  5. Fold over the tortilla and lightly butter both sides.<\/li>\n
  6. Cook over medium heat flipping when one sides starts to brown.<\/li>\n
  7. Once the other side is lightly brown and the cheese is melted, it is ready.<\/li>\n
  8. Serve with sour cream and salsa.<\/li>\n<\/ol>\n
