They also make these amazing kimchi\u00a0<span style=\"line-height: 1.5em;\">quesadillas (<\/span><a style=\"line-height: 1.5em;\" title=\"Kimchi Quesadillas w\/ Warm Ginger Sauce &amp; Cool Srirachi Sour Cream\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/kimchi-quesadillas-w-warm-ginger-sauce-cool-srirachi-sour-cream\/\" target=\"_blank\">here is my version<\/a><span style=\"line-height: 1.5em;\">) that are to die for. For a while now, I&#8217;ve been wanting to try making some Korean style tacos and finally got around to it. I was super inspired by the Korean taco recipes on <\/span><a style=\"line-height: 1.5em;\" title=\"Korean Tacos\" href=\"http:\/\/www.asianenticement.com\/korean-tacos-asian-fusion-recipe\/\" target=\"_blank\">Asian Enticement<\/a><span style=\"line-height: 1.5em;\">\u00a0especially the sweet and spicy mayo and the\u00a0Korean sangchu lettuce salad.<\/span><\/p>\n<p>I was originally going to marinate tofu in a Korean bbq sauce, but then thought about the \u00a0gochujang in fridge.\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" width=\"1\" height=\"1\" border=\"0\" \/>\u00a0is this amazing pungent Korean chili paste. You can read more about it\u00a0<a title=\"Gochujang\" href=\"http:\/\/en.wikipedia.org\/wiki\/Gochujang\" target=\"_blank\">here<\/a>. So I decided to marinate the tofu for the tacos similar to\u00a0<a title=\"Sesame-Gochujang Tofu\" href=\"http:\/\/www.sparkpeople.com\/mypage_public_journal_individual.asp?blog_id=4733574\" target=\"_blank\">this recipe<\/a>. Next time I might try Korean bbq sauce. I bet it would be good too! For the sweet and spicy mayo, if you have Japanese mayo I bet it would be even more fantastic (smoother and sweeter) but Best Foods (full fat!) is good too and what I used.\u00a0I liked the idea of adding sweet chili sauce that I found in <a title=\"Sweet &amp; Spicy Mayo\" href=\"http:\/\/threemorebites.wordpress.com\/2012\/02\/17\/sweet-and-spicy-mayo\/\" target=\"_blank\">this recipe<\/a>.\u00a0Then I thought I should throw some of the gochujang into the sweet and spicy mayo too!<\/p>\n<p>For the mayo, really just make sure to use mayo, something spicy (preferably\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/B0002PSOJW\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0002PSOJW&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">sriracha sauce<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B0002PSOJW\" width=\"1\" height=\"1\" border=\"0\" \/>, sometimes called rooster sauce because of the rooster that is usually on the label) and something sweet. I loved the combination of what I used, but I&#8217;m sure other ways would work well.<\/p>\n<p>This recipe for Korean tofu tacos looks a little complicated because of all the ingredients, but they don&#8217;t take very long to make. There isn&#8217;t much chopping so the ingredients are more just a bunch of sauces mixed up.<\/p>\n<\/div>\n<div><\/div>\n<div><span style=\"text-decoration: underline;\">Gochujang Tofu<\/span><\/div>\n<div id=\"yui_3_2_0_25_134931366853962\">\n<div id=\"yui_3_2_0_25_1349313668539229\">\n<div id=\"yiv1633842891\">\n<div id=\"yui_3_2_0_25_1349313668539228\">\n<div id=\"yui_3_2_0_25_1349313668539227\">\n<div id=\"yui_3_2_0_25_1349313668539225\">1 tablespoon <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002WTE0MQ\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002WTE0MQ&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">gochujang<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002WTE0MQ\" width=\"1\" height=\"1\" border=\"0\" \/><\/div>\n<div id=\"yui_3_2_0_25_1349313668539225\">1 teaspoon sesame oil<\/div>\n<div id=\"yui_3_2_0_25_1349313668539225\">1 teaspoon rice vinegar<\/div>\n<div id=\"yui_3_2_0_25_1349313668539225\">2 teaspoons soy sauce<\/div>\n<div id=\"yui_3_2_0_25_1349313668539225\">1 pound extra firm tofu cut into little squares<br \/>\nSalt<\/div>\n<div id=\"yui_3_2_0_25_1349313668539225\">\n<div id=\"yui_3_2_0_25_1349313668539225\">\n<ol>\n<li>Mix the gochujang, sesame oil, vinegar, and soy sauce.<\/li>\n<li>Toss the tofu in the marinade, sprinkle with a little salt, and let sit while prepping other ingredients.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div>\n<div id=\"yui_3_2_0_25_134931366853954\"><span style=\"text-decoration: underline;\">Spicy &amp; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B00016UX0K\" width=\"1\" height=\"1\" border=\"0\" \/><br \/>\nSqueeze of lemon or lime<\/div>\n<div id=\"yui_3_2_0_25_1349313668539226\">\n<ul>\n<li>Mix all ingredients together until smooth.<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div><span style=\"text-decoration: underline;\">Asian Dressing<\/span><\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">2 tablespoons soy sauce<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">1 tablespoon rice vinegar<\/div>\n<div>1 tablespoon lime juice<br \/>\n2 teaspoons sesame oil<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">\n<ul>\n<li>Mix ingredients together.<\/li>\n<\/ul>\n<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\"><span style=\"text-decoration: underline;\">Korean Tofu Tacos<br \/>\n<\/span>Gochujang tofu<\/div>\n<div>\n<div>8 corn tortillas<\/div>\n<div>Olive oil spray<\/div>\n<\/div>\n<div>3-4 cups thinly sliced cabbage<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">3-4 green onions chopped<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">1\/2 cup or so cilantro chopped<\/div>\n<div id=\"yui_3_2_0_25_1349313668539219\">2 green chilis minced<br \/>\n2 teaspoons minced ginger (fresh really is best here)<\/div>\n<div>Asian dressing<br \/>\nSpicy &amp; sweet gochujang mayo<br \/>\nToasted sesame seeds (freshly toasted is best!)<\/p>\n<ol>\n<li>Broil or saute in a skillet the marinated tofu until lightly browned.<\/li>\n<li>Toss the cabbage, green onions, cilantro, green chili, and ginger with the dressing.<\/li>\n<li>Lightly spray corn tortilla with olive oil spray and cook over the open gas flame until soft and a little browned on the edges (it gets soft fast, but then you need to cook it more so it firms up a little again).<\/li>\n<li>Make up your tacos: tortilla, marinated tofu, salad, a drizzle of spicy &amp;
