Paneer makhani and yellow dal is basically what my husband, Tejas, and I get every time we go to a north Indian restaurant! Okra fry sometimes too. I&#8217;m hungry as I write this and now okra fry sounds sooo good! Anyways&#8230;Years ago, I was taught the basics on how to make makhani gravy and over the years I have always made it a little different, sometimes using fresh tomatoes and tomato paste, sometimes with canned tomatoes, using different spices such as omitting the cardamom because Tejas isn&#8217;t a fan, using whole spice, \u00a0using ground spice, adding ground cashews or fresh methi leaves, etc. Once I even used a can of\u00a0Campbell&#8217;s\u00a0tomato soup because there was nothing else tomatoey in the house and it turned out\u00a0delicious! As I found out later, supposedly the famous &#8220;tikka malasa&#8221; was created in the UK using tomato soup (not sure if this is true or not). Paneer tikka masala is a very close recipe to paneer makhani but the paneer has been marinaded and grilled in a tandoor before being added to the curry.<\/p>\n<p>We try and be a little health\u00a0conscious during the week, so for this version I used very little makhani (butter) and whole milk instead of cream. Except for that I love how butter looks when it kinda separates out of the curry, it still tasted very rich and delicious!<\/p>\n<p>Tejas said once that he doesn&#8217;t like to use whole spices in anything that gets blended and that made a lot of sense to me, therefore this recipe uses all ground spices. Fresh ground spice is best! This isn&#8217;t a super fast dish because it needs time to really get the flavors going, but there aren&#8217;t a lot of steps and you don&#8217;t have to watch it all the time. We like it spicy and sweet so adjust to your taste.<\/p>\n<p>1 1\/2 tablespoons butter<br \/>\n3 medium onions chopped<br \/>\n2-3 green chilis chopped<br \/>\n2 cubes Trader Joe&#8217;s frozen garlic (or you could use 1-2 teaspoons garlic paste)<br \/>\n1 teaspoon ginger paste<br \/>\n26 ounces diced tomatoes (I used box of <a href=\"http:\/\/www.amazon.com\/gp\/product\/B0005ZVOR8\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0005ZVOR8&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Pomi Chopped Tomatoes<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B0005ZVOR8\" width=\"1\" height=\"1\" border=\"0\" \/>, but you could use two 14oz tomato cans or one of the bigger 28oz kind)<br \/>\nSqueeze or so of ketchup<br \/>\n1 teaspoon turmeric<br \/>\n1 teaspoon chili powder<br \/>\n2 teaspoons coriander powder<br \/>\n1 tablespoon garam masala<br \/>\n~3 tablespoons sugar<br \/>\nSalt<br \/>\n1 cup milk (I used whole)<br \/>\nWater<br \/>\n2 tablespoons kasuri methi leaves<br \/>\n1\/2 &#8211; 1 pound paneer cut into cubes<\/p>\n<ol>\n<li>Heat the butter in a medium sauce pan over medium heat and add the onions.<\/li>\n<li>Cook stirring often until the onions are starting to get really caramelized, adding the green chilis part way through cooking.<\/li>\n<li>Add the garlic, ginger, tomatoes, ketchup, turmeric, chili powder, coriander, garam masala, sugar and salt, and cook for 20-30 minutes to really get the flavors to meld.<\/li>\n<li>Blend in a blender in a couple of batches with both the milk and water to get it to the consistency you like.<\/li>\n<li>Pour back into the pan, adjust salt and sugar, and add the kasuri methi leaves and paneer.<\/li>\n<li>Cook until the paneer is soft and heated through. You can also pan fry the paneer in a little butter first, then soak in a mixture of yogurt, hot water, and salt until ready to add to the curry.<\/li>\n<li>Service with whole wheat paratha or naan, <a title=\"Green Chili Raita\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/green-chili-raita\/\">green chili raita<\/a>, and onions with lime and chaat masala.<\/li>\n<\/ol>\n<div class=\"social-likes social-likes_notext\" data-title=\"Paneer Makhani\" data-url=\"https:\/\/mayabugs.com\/blog\/paneer-makhani\/\" data-counters=\"yes\"><div class=\"facebook\" title=\"Share link on Facebook\"><\/div><div class=\"plusone\" title=\"Share link on Google+\"><\/div><div class=\"twitter\" data-via=\"mayabugs\" title=\"Share link on Twitter\"><\/div><div class=\"pinterest\" title=\"Share image on Pinterest\" data-media=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Paneer-Makhani-1024x764.jpg\"><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>Paneer makhani is a mild Indian cheese cooked in a rich delicious buttery tomato gravy.
