Fermenting batter takes so long so I was excited when I found out about khaman dhoklas which only use besan flour. They are fairly simple to make and are super light, moist and fluffy. Last night, my husband Tejas wanted <a title=\"Gujarati Dal\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/gujarati\/gujarati-dal\/\">Gujarati dal<\/a> and rice so I thought this would be a good time to try out khaman dhokla for an appetizer and I really enjoyed how they came out! This recipe is adapted from <a title=\"Chef In You Khaman Dhokla Recipe\" href=\"http:\/\/chefinyou.com\/2009\/07\/khaman-dhokla-recipe\/\" target=\"_blank\">this recipe on the Chef In You<\/a>.<\/p>\n<p>1\/2 cups yogurt<br \/>\n1\/2 cup water<br \/>\n1 1\/2 cups besan flour (chickpeas\/gram flour)<br \/>\n1\/2 teaspoon baking soda<br \/>\n1 tablespoon oil<br \/>\n1\/4 teaspoon turmeric<br \/>\n1\/2 teaspoon ginger paste<br \/>\n1-2 teaspoons sugar<br \/>\nSmall squeeze of lemon juice<br \/>\nSalt<br \/>\n1 1\/2 teaspoons Eno (fruit salt &#8211; it makes the dhokla fluffy, you can get it at an Indian market or <a href=\"http:\/\/www.amazon.com\/gp\/product\/B000JWM7JG\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B000JWM7JG&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">or on Amazon<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B000JWM7JG\" width=\"1\" height=\"1\" border=\"0\" \/>)<br \/>\n1 teaspoon oil + 2 teaspoons water mixed<br \/>\n2 teaspoons more oil<br \/>\n1 teaspoon mustard Seeds<br \/>\n2 green chilis chopped<br \/>\n6-7 curry leaves<\/p>\n<ol>\n<li>Whisk the yogurt and water together.<\/li>\n<li>Slowly whisk in the besan flour little by little until a smooth batter forms.<\/li>\n<li>Whisk in the baking soda and then let the batter sit for about an hour.<\/li>\n<li>Next mix in the oil, turmeric, ginger paste, sugar, lemon juice and salt.<\/li>\n<li>Get your cooking gear ready. The dhoklas need to steam. I used a pressure cooker without the whistle and two pressure trays (similar to <a title=\"Pressure Cooker Trays\" href=\"http:\/\/www.qvc.com\/qvc.product.K31045.html?item=K31045&amp;ref=GAS&amp;tpl=detail&amp;cm_ven=GOOGLESHOPPINGFEED&amp;cm_cat=Cooking%20&amp;%20Dining&amp;cm_pla=Cookware&amp;cm_ite=K31045-000-000&amp;adtype=pla\" target=\"_blank\">these<\/a>). Lightly grease one of the trays and leave the other empty. Put just enough water in the pressure cooker so that the two trays won&#8217;t float and get it boiling.<\/li>\n<li>Just before steaming, whisk in the Eno, and pour into the greased tray.<\/li>\n<li>Put both trays in the pressure cooker, the empty one on the bottom, cover and let steam for 10-12 minutes (or until a toothpick comes out clean). The steam will come out the top of the pressure cooker.<\/li>\n<li>Take the dhokla tray out and lightly brush the dhokla with the oil and water mixture (I used a baster). This makes it nice and moist.<\/li>\n<li>Heat the rest of the oil in a tadka or other small pan, and add the mustard seeds.<\/li>\n<li>Once the mustard seeds start to pop, add the green chilis and curry leaves for a couple more seconds.<\/li>\n<li>Pour over the dhokla, cut into squares and serve with cilantro chutney.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Dhoklas are a Gujarati snack made of a fermented batter of rice and besan flour which is steamed and then cut into squares.
