It started because I looked in the freezer to see if we had any frozen Indian food and saw the new Madras tomato chutney the Indian store owner recommended. We had a box of dosa in the cupboard and I&#8217;ve been curious to find a new sambhar recipe for a while, so why not give it a go?<\/p>\n<p>My favorite kind of dosa is a Mysore dosa which includes red chutney therefore that is what I made.<\/p>\n<p>Dosa is served with sambar (a lentil soup), coconut chutney, and sometimes tomato chutney. <a title=\"Quick Sambar\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/quick-sambar\/\">Here is the easy sambar recipe<\/a> I made tonight and <a title=\"Idli Sambhar\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/idli-sambhar\/\">here is a more complex sambar<\/a> for when you have a little more time. The first uses a pressure cooker to do the bulk of the work and ready made sambar powder. The 2nd is more labor intensive with grinding and adding things at different stages.<\/p>\n<p>I have tried and failed to cook a dosa in the past. They usually come out very messy and I can&#8217;t get them spread nicely. But tonight I think I got it sorta right! This is weird, but because we don&#8217;t have a flat ladle for spreading the batter, I used a small tadka pan because it had a flat bottom. They are still a little thicker than I would like, but still smooth and together. Yay!<\/p>\n<p>The red chutney is adapted from\u00a0<a title=\"Yummy Tummy's Mysore Masala\" href=\"http:\/\/www.yummytummyaarthi.com\/2012\/01\/mysore-sada-dosa-mysore-sada-dose-how.html\" target=\"_blank\">Yummy Tummy&#8217;s recipe<\/a>.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/mysore-dosa\/attachment\/mysore-masala\/\" rel=\"attachment wp-att-2788\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2788\" title=\"Mysore Masala\" alt=\"\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Masala-1024x705.jpg\" width=\"1024\" height=\"705\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Masala-1024x705.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Masala-400x275.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\">Red Chutney<br \/>\n<\/span>1 tablespoon oil<br \/>\n1 tablespoon channa dal<br \/>\n1 tablespoon urad dal<br \/>\n1 big garlic clove cut into chunks<br \/>\n1\/4 cup desiccated coconut<br \/>\n1 teaspoon kashmiri chili powder<br \/>\n1 teaspoon chili powder<br \/>\n1 teaspoon natural tamarind paste<br \/>\n1 teaspoon jaggery<br \/>\nSalt<\/p>\n<ol>\n<li>Heat oil in a medium skillet.<\/li>\n<li>Add channa dal, urad dal and garlic and cook over medium heat until the dal is toasty and the garlic is cooked.<\/li>\n<li>Add the coconut and chili powders and cook until another minute or so.<\/li>\n<li>Add the tamarind, jaggery and salt and stir.<\/li>\n<li>Cook a little and then grind with a little water in a small food processor, grinder or coffee grinder.<\/li>\n<\/ol>\n<div><a href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/mysore-dosa\/attachment\/mysore-dosa-with-onions\/\" rel=\"attachment wp-att-2791\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2791\" title=\"Mysore Dosa with Onions\" alt=\"\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Dosa-with-Onions-1024x768.jpg\" width=\"1024\" height=\"768\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Dosa-with-Onions-1024x768.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Dosa-with-Onions-400x300.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/08\/Mysore-Dosa-with-Onions.jpg 1792w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/div>\n<div><span style=\"text-decoration: underline;\"><br \/>\nMysore Dosa<\/span><\/div>\n<div>Dosa batter (I used <a href=\"http:\/\/www.amazon.com\/gp\/product\/B002DQZX7E\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B002DQZX7E&amp;linkCode=as2&amp;tag=mayabugs-20\" rel=\"nofollow\">Gits Dosai Mix<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=B002DQZX7E\" width=\"1\" height=\"1\" border=\"0\" \/> but you can use store bought batter or make your own)<\/div>\n<div>Oil<br \/>\nRed chutney<\/div>\n<div>Onions finely diced (optional)<\/div>\n<div>\n<ol>\n<li>On a cold dosa pan or other big flat skillet pour a\u00a0ladle\u00a0of dosa batter and spread it around in a circular pattern to make it thin.<\/li>\n<li>Drizzle with oil around the edges.<\/li>\n<li>Spread a little Mysore masala over the whole dosa and cook until the dosa is crisp.<\/li>\n<li>Add a little bit of the raw onions, fold and serve with\u00a0<a title=\"Deep Brand Coconut &amp; Tomato Chutneys\" href=\"http:\/\/mayabugs.com\/blog\/store-bought-ingredients\/deep-brand-coconut-tomato-chutneys\/\" target=\"_blank\">coconut chutney<\/a>, <a title=\"Deep Brand Coconut &amp; Tomato Chutneys\" href=\"http:\/\/mayabugs.com\/blog\/store-bought-ingredients\/deep-brand-coconut-tomato-chutneys\/\" target=\"_blank\">tomato chutney<\/a>, <a title=\"Quick Sambar\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/quick-sambar\/\">sambar<\/a>, or a combination of these.<\/li>\n<\/ol>\n<\/div>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The other night I was going to be eating solo, so I was planning on just throwing something quick together, but then somehow I ended up making Mysore dosa with a new kind of sambhar!
