I followed the recipe really closely, only changing a few little things. At the time, we had soy enchiladas with the sauce and they came out fantastic! There was so much sauce that I ended up freezing some of it for use at a later time. I love it when I remember to use leftovers and stuff I freeze, as I hate throwing things away. Actually that is not entirely true. I don&#8217;t mind throwing out junk food, anything like chips or processed food doesn&#8217;t bother me, but really food, vegetables, home made sauces, the good stuff, I cringe. I just feel so bad when something gets moldy because I didn&#8217;t get it into a recipe in time!<\/p>\n<p>Anyways&#8230;this recipe for wet burritos is probably not authentic, but it was super good.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/mexican-recipes\/wet-burritos-w-mole-sauce\/attachment\/mole-burrito\/\" rel=\"attachment wp-att-2632\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2632\" title=\"Mole Burrito\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/03\/Mole-Burrito-1024x768.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/03\/Mole-Burrito-1024x768.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/03\/Mole-Burrito-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\">Mole Sauce<\/span><br \/>\n1 tablespoon oil<br \/>\n1 onion chopped<br \/>\n1 green bell pepper chopped<br \/>\n3 cloves garlic chopped (not too small)<br \/>\n2 tablespoons chili powder<br \/>\n2 teaspoons cumin ground<br \/>\n\u00bd teaspoon cinnamon ground<br \/>\n2-3\u00a0<a title=\"Chipotle Peppers in Adobo on Amazon\" href=\"http:\/\/www.amazon.com\/Embasa-Chipotle-Peppers-Adobo-7-Ounce\/dp\/B000H25VSM\/ref=sr_1_cc_2?s=aps&amp;ie=UTF8&amp;qid=1331135189&amp;sr=1-2-catcorr\" rel=\"nofollow\">Chipotle Peppers in Adobo Sauce<\/a><br \/>\n\u00bd\u00a0box of <a title=\"Pomi Chopped Tomatoes\" href=\"http:\/\/www.amazon.com\/Pomi-Chopped-Tomatoes-26\/dp\/B005AYEW5K\" rel=\"nofollow\">Pomi Chopped Tomatoes<br \/>\n<\/a>\u00bc cup raisins<br \/>\n\u00bc roasted peanuts<br \/>\n2 tablespoons sugar<br \/>\nSalt<br \/>\n1 bottle dark beer<br \/>\n2 ounces unsweetened or dark chocolate (if using dark chocolate, use less sugar)<\/p>\n<ol>\n<li>Heat oil and saute onions, bell pepper, and garlic slowly until super soft and golden, almost\u00a0caramelized, without burning. This will give the sauce a rich flavor and it will blend into a smooth sauce.<\/li>\n<li>Add chili powder, cumin, cinnamon, and chipotle peppers, and cook for a few minutes.<\/li>\n<li>Add tomatoes, raisins, peanuts, sugar, salt, beer, and water and simmer for 20 minutes stirring occasionally.<\/li>\n<li>Put everything in a blender and blend until a smooth sauce adding more water if necessary.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">The Fixings<\/span><br \/>\n1 tablespoon oil<br \/>\n1 teaspoon cumin<br \/>\n1-2 bell peppers sliced (red, green or both &#8211; I used one of each)<br \/>\n1-2 onions sliced<br \/>\n1 teaspoon dried oregano<br \/>\nSalt<br \/>\n1 package soy or seitan strips\/chunks (I like the seitan from Whole Foods)<br \/>\nFlour tortillas<br \/>\n3-4 ounces extra sharp cheddar cheese<br \/>\nSour cream (depending on how much you like; I LOVE sour cream)<br \/>\nCilantro chopped<\/p>\n<ol>\n<li>Heat oil in a big skillet or wok.<\/li>\n<li>Add cumin and cook for a minute or so.<\/li>\n<li>Add bell pepper and cook\u00a0stirring\u00a0fast over high heat for a few minutes.<\/li>\n<li>Add onions and continue stirring.<\/li>\n<li>Add oregano and salt and cook until tender crisp.<\/li>\n<li>Cook soy or seitan in mole sauce until warmed through.<\/li>\n<li>Slice the cheese into strips, but not too thin so you can taste the cheese with all the other stuff.<\/li>\n<\/ol>\n<div>\n<p><span style=\"text-decoration: underline;\">Putting It All Together<br \/>\n<\/span><span style=\"font-size: medium;\">1. \u00a0Heat a tortilla until warm.<br \/>\n<\/span><span style=\"font-size: medium;\">2. \u00a0Add soy or seitan, onion and bell pepper mixture, sour cream, cheese, and cilantro to the tortilla and roll it up as best you can.<br \/>\n<\/span><span style=\"font-size: medium;\">3. \u00a0Top with a lot of mole sauce and a dollop of sour cream and cilantro. Voila!<\/span><\/p>\n<\/div>\n<div>\n<p>A couple of notes about this recipe:<\/p>\n<ul>\n<li>Seitan is also called &#8220;wheat meat&#8221;. It is made by rinsing the starch out of whole wheat flour. The gluten that is left behind is high in protein. I made it a couple of times years ago, but found it easier to just buy ready made. I recently found out that you can make it using something called vital wheat gluten instead of all the rinsing. I might try that sometime.<\/li>\n<li>I am a big fan of cold cheese. I think you can really taste the cheese better when it is cold. Therefore I like adding it after the sour cream since the sour cream will keep it cold.
