I needed stock fast one night and found <a title=\"Pressure Cooker Vegetable Stock\" href=\"http:\/\/dinersjournal.blogs.nytimes.com\/2008\/09\/30\/flavorful-vegetable-stock\/\" target=\"_blank\">this great post<\/a>.<\/p>\n<p>1-2 tablespoons oil (optional)<br \/>\n2 onions sliced<br \/>\n2 carrots chopped<br \/>\n2 celery sticks chopped<br \/>\nOther vegetables on hand (I used asparagus and cabbage, but you could also use tomatoes, bell pepper, etc.)<br \/>\n1\/2 teaspoon peppercorns<br \/>\nSalt<\/p>\n<ol>\n<li>Heat the oil in a pressure cooker on high and throw in the onions.<\/li>\n<li>Once the onions start to brown after a few minutes add in the other veggies.<\/li>\n<li>Add water about 3\/4 of the way up the pressure cooker and close.<\/li>\n<li>Heat on high until the first whistle, then lower to medium and cook for 15-20 minutes.<\/li>\n<li>Let the pressure exit the cooker naturally and strain out the vegetables.<\/li>\n<li>If you are not using the stock right away, pour into ice cube trays, freeze, and then store the stock cubes in a ziplock bag.<\/li>\n<\/ol>\n<div class=\"social-likes social-likes_notext\" data-title=\"Pressure Cooker Vegetable Stock\" data-url=\"https:\/\/mayabugs.com\/blog\/pressure-cooker-vegetable-stock\/\" data-counters=\"yes\"><div class=\"facebook\" title=\"Share link on Facebook\"><\/div><div class=\"plusone\" title=\"Share link on Google+\"><\/div><div class=\"twitter\" data-via=\"mayabugs\" title=\"Share link on Twitter\"><\/div><div class=\"pinterest\" title=\"Share image on Pinterest\" data-media=\"\"><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>This is a great way to make vegetable stock, especially when you&rsquo;re in a rush!
