He is so much better at it than I am! I thought this one was particularly good. You can make these Chinese Pan Fried Noodles with soft noodles or you can pan fry them (I suppose the name wouldn&#8217;t be &#8220;pan fried&#8221; anymore, but you know what I mean :-)). This time I just left them soft, but I included the steps for making them crunchy. I first started pan frying noodles years ago because of a recipe in Robin Robertson&#8217;s\u00a0<a href=\"http:\/\/www.amazon.com\/gp\/product\/1558322051\/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;tag=mayabugs-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1558322051\" target=\"_blank\" rel=\"nofollow\">The Vegetarian Meat and Potatoes Cookbook<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=mayabugs-20&amp;l=as2&amp;o=1&amp;a=1558322051\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>. She has you toss the noodles in soy sauce and sesame oil which is really good, but just the idea of pan frying noodles without deep frying I like.<\/p>\n<p><a href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/chinese-pan-fried-noodles\/attachment\/chinese-pan-fried-noodles-2\/\" rel=\"attachment wp-att-2533\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2533\" title=\"Chinese Pan Fried Noodles\" src=\"http:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Chinese-Pan-Fried-Noodles-1024x901.jpg\" alt=\"\" width=\"1024\" height=\"901\" srcset=\"https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Chinese-Pan-Fried-Noodles-1024x901.jpg 1024w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Chinese-Pan-Fried-Noodles-400x352.jpg 400w, https:\/\/mayabugs.com\/blog\/wp-content\/uploads\/2012\/04\/Chinese-Pan-Fried-Noodles.jpg 1926w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>8 ounces fresh thin Chinese noodles<br \/>\n2 tablespoons oil (if you are pan frying the noodles)<br \/>\n2 carrots sliced<br \/>\n1 teaspoon oil<br \/>\nSoy or seitan stips (I used seitan from whole foods)<br \/>\n1-2 tablespoon oil<br \/>\n1 cup snap or snow peas<br \/>\n1 onion cut into chunks<br \/>\n8 ounces mushrooms cut into half or fourths (depending on size)<br \/>\n1\/4 cabbage chopped in big pieces<br \/>\n1\/2 can baby corn<br \/>\nSalt<br \/>\n1\/2 cup rice wine<br \/>\n1\/4 soy sauce<br \/>\n2 tablespoons sesame oil<br \/>\n1-2 tablespoons sugar<br \/>\n1 tablespoon + 1 teaspoon cornstarch<br \/>\n2 green onions chopped<\/p>\n<ol>\n<li>Boil water and add noodles for a couple of minutes and drain.<\/li>\n<li>Let noodles dry on paper towels or a towel.<\/li>\n<li>Once noodles are dry, heat oil in a medium skillet, add the noodles in a thin layer, and press them down to get more noodles touching the pan. Cook over medium low heat until the bottom gets crunchy.<\/li>\n<li>Flip the noodles over and cook the other side until they gets crunchy (you can use a plate to do the flipping).<\/li>\n<li>Meanwhile, put the carrots in a bowl with water and microwave for 2-3 minutes until they are soft, and drain.<\/li>\n<li>Heat the teaspoon oil in another skillet and brown the soy or seitan strips.<\/li>\n<li>Heat the 2 tablespoons of oil in a wok over high heat.<\/li>\n<li>Add snap or snow peas and cook on high stirring constantly for a couple of minutes.<\/li>\n<li>Add the onions and mushrooms and continue to cook over high heat until the veggies start to soften and get brown spots. They should be a little soft, but still crunchy.<\/li>\n<li>Add the carrots, cabbage, baby corn, and salt to the vegetables and cook for a another minute or so.<\/li>\n<li>Add rice wine, soy sauce, sesame oil, sugar, and 1 cup of water, and heat through.<\/li>\n<li>Mix cornstarch with a little water.<\/li>\n<li>Push vegetable to the side of the wok and add the cornstarch mixture to the sauce. Bring it to a slow boil.
