I saw the idea online when we first moved to our apartment but I can&#8217;t find the site now. I like to get <a title=\"BPA Free Lids\" href=\"http:\/\/www.containerstore.com\/shop?productId=10013117&amp;N=&amp;Ntt=quattro+stagioni+jar+lids\" target=\"_blank\">lids<\/a> separately because double lids are annoying to open and these ones are BPA free.<\/p>\n<p><strong>The Perishables<\/strong><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong>Onions<\/strong> \u2013 My most favorite ingredient.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Garlic<\/strong> \u2013 I don\u2019t believe you can have too much. Oh wait. I made this tzatziki sauce once and it was so raw garlicky it was painful, so yes, you can have too much.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Tomatoes<\/strong> &#8211; People don&#8217;t always understand keeping tomatoes out. I agree they can go bad faster, but they get this mushy texture when in the fridge that I don&#8217;t like.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Potat<strong>oes<\/strong><\/strong><\/span><\/li>\n<\/ul>\n<p><strong>Dried Dals &amp; Beans<br \/>\n<\/strong><span style=\"color: #888888;\">Black dal isn&#8217;t listed because we don&#8217;t have it much, but if we do, we get it already cooked and recipe ready from Trader Joe&#8217;s. The last time I checked they had two types, one in the refrigerated vegetable section and another in the pantry area in air tight plastic packaging.\u00a0I like the\u00a0refrigerated\u00a0variety better, it mushes up more.<\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong>Toor Dal<\/strong> \u2013 The dal we used most. I like it with mustard seeds and curry leaves best.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Channa Dal<\/strong> \u2013 Also yummy, I like it cuminy and tomatoey.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Moong Dal (green)<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Moong Dal (yellow)<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Moong Whole (mug)<\/strong> \u2013 Very satisfying Indian Breakfast.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Masoor Dal<\/strong> \u2013 Great <a title=\"Masoor Dal w\/ Goda Masala (Amti)\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/dals_pulses\/mysoor-dal-w-goda-masala-amti\/\" target=\"_blank\">dal with goda masala<\/a>.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Urad Dal<\/strong> \u2013 Used in a lot of South Indian Recipes and for Apam.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Channa\/Chole<\/strong> \u2013 Gabanzo beans. I like two Indian types of channa masala the dark cinnamony style and a <a title=\"Channa Bhatura\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/dals_pulses\/channa-bhatura-3\/\" target=\"_blank\">creamier lighter style<\/a>.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Kidney Beans<\/strong> \u2013 Can we say <a title=\"Rajma Masala (Kidney Bean Curry)\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/dals_pulses\/rajma-masala-kidney-bean-curry\/\" target=\"_blank\">rajma masala<\/a>! Sometimes I soak some and freeze them so they are ready to go faster.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Pinto Beans<\/strong> \u2013 For the best most authentic Mexican refried beans, but I don\u2019t refry them. Maybe that makes them not authentic? Not sure, but they taste right to me!<\/span><\/li>\n<\/ul>\n<p><strong>Rice &amp; Noodles<\/strong><\/p>\n<ul>\n<li><span style=\"color: rgb(128, 128, 128);\"><strong>Sona Masoori Rice<\/strong> &#8211; Every day Indian rice.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Basmati Rice<\/strong> &#8211; We use basmati rice the most.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Jasmin Rice<\/strong> &#8211; I pretty much use Jasmin for anything that goes with a medium grain white rice. Vietnamese and Thai food? Of course, Jasmin. Spanish rice? Jasmin. Rice pilaf? Jasmin.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Calrose Rice<\/strong> \u2013 Good for Japanese dishes like teriyaki.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Brown Short Grain Rice<\/strong> &#8211; I tried to get us to use a brown variety of every kind of rice, but really, it wasn\u2019t happening.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Spaghetti<\/strong> &#8211; Mmm for <a title=\"Simple Spaghetti Sauce (American Style)\" href=\"http:\/\/mayabugs.com\/blog\/european-recipes\/italian\/simple-spaghetti-sauce-american-style\/\" target=\"_blank\">spaghetti<\/a>.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Penne, rotelli, or other Italian Pasta<\/strong> \u2013 We usually have a couple on hand at any one time.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Pad Thai Noodles<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Asian Wheat Noodles<\/strong> \u2013 Pancit, Chinese wheat noodles, etc.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Rice Vermicelli<\/strong><\/span><\/li>\n<li><span style=\"color: rgb(128, 128, 128);\"><strong>Japanese Soba Noodles<\/strong><\/span><\/li>\n<\/ul>\n<p><strong>Cans &amp; Boxes &amp; Jars<\/strong><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong>Kidney Beans<\/strong> \u2013 For quick Rajma Masala.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Garbanzo\u00a0Beans<\/strong> \u2013 Indo-Chinese brand for quick chaat and channa masala. This brand&#8217;s chick peas are very tender alleviating the need to cook them to get them softer.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Black Beans<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Petite Diced Tomatoes<\/strong>\u00a0&#8211; We used to us Pomi tomato products because I found out that the acidity of tomatoes eats at the can lining which contains BPA, but Pomi tomatoes don&#8217;t always last even until their expiration date, so I can&#8217;t rely on them. Unfortunately it is back to canned. I like petite diced better than normal diced because the tomatoes seem more tender and less chunky.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Crushed Tomatoes in Tomato Puree<\/strong> &#8211; Great for <a title=\"Simple Spaghetti Sauce (American Style)\" href=\"http:\/\/mayabugs.com\/blog\/european-recipes\/italian\/simple-spaghetti-sauce-american-style\/\" target=\"_blank\">simple marina sauce<\/a>!<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Tomato Paste<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Coconut Milk<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Bottled Spaghetti Sauce<\/strong> (like Prego!)<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Chipotle Peppers in Adobo Sauce<\/strong> &#8211; Amazing in spanish rice and other dishes. Hot and smokey.<\/span><\/li>\n<li><span style=\"color: #888888;\"><b>Diced Green Chiles<\/b><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Straw Mushrooms<\/strong> &#8211; \u00a0For chinese dishes.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Baby Corn<\/strong> &#8211; For Indian Chinese food and <a title=\"Chinese Pan Fried Noodles\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/chinese-pan-fried-noodles\/\" target=\"_blank\">Chinese pan fried noodles<\/a>.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Bamboo Shoots<\/strong> &#8211; For Chinese (like <a title=\"Chinese Hot &amp; Sour Soup\" href=\"http:\/\/mayabugs.com\/blog\/asian-recipes\/chinese-hot-sour-soup\/\" target=\"_blank\">hot &amp; sour soup<\/a>) and Thai dishes.<\/span><\/li>\n<li><span style=\"color: #808080;\"><strong>Canned Lychees<\/strong> &#8211; To make shaved ice. Yum.<\/span><\/li>\n<li><span style=\"color: #808080;\"><strong>Canned Mango Pulp<\/strong> &#8211; For <a title=\"Easy Mango Lassi\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/easy-mango-lassi\/\" target=\"_blank\"><span style=\"color: #808080;\">mango lassi<\/span><\/a>.<\/span><\/li>\n<\/ul>\n<p><strong>Nuts &amp; Things<\/strong><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong style=\"color: #888888;\">Peanuts<\/strong><span style=\"color: #888888;\">\u00a0\u2013 Tejas puts peanuts on everything that, 1) isn\u2019t Indian, and 2) he\u00a0doesn&#8217;t\u00a0put Maggi Hot &amp; Sweet Tomato Chili Sauce on.<\/span><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Walnuts<\/strong> \u2013 Mostly for oatmeal, but good for salads too.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Sliced Almonds<\/strong> \u2013 Good for <a title=\"Cape Malay Yellow Rice\" href=\"http:\/\/mayabugs.com\/blog\/mediterranean-middle-eastern-african\/south-african\/cape-malay-yellow-rice\/\">Cape Malay yellow rice<\/a>.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Pinenuts<\/strong> \u2013 Good in pastas and salads (these can be kept in the freezer too to make them last longer).<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Cashews<\/strong> \u2013 Used in some Indian recipes.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Desiccated Coconut<\/strong> \u2013 Used in South Indian recipes.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Raisins<\/strong> \u2013 Good in Cape Malay yellow rice, and fun taco recipes.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Boondi<\/strong> \u2013 Itty bitty fried flour balls. For <a title=\"Rajma Masala (Kidney Bean Curry)\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/dals_pulses\/rajma-masala-kidney-bean-curry\/\" target=\"_blank\">boondi raita<\/a> (just add boondi &amp; the masala to yogurt), fantastic with <a title=\"Rajma Masala (Kidney Bean Curry)\" href=\"http:\/\/mayabugs.com\/blog\/indian-recipes\/dals_pulses\/rajma-masala-kidney-bean-curry\/\" target=\"_blank\">rajma masala<\/a>!<\/span><\/li>\n<\/ul>\n<p><strong><span style=\"color: #000000;\">Mixes &amp; Such<\/span><\/strong><em><strong><br \/>\n<\/strong><\/em><span style=\"color: #888888;\">Shoot, these are all mostly for Indian breakfasts, except for the Banx Xeo. Maybe I\u2019ll reorganize this another time.<\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong>Suji<\/strong> \u2013 Wheat semolina, for upma, Indian style cream of wheat.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Sabudano<\/strong> \u2013 Little tapioca ball, an Indian breakfast.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Indian Rice Vermicelli<\/strong> \u2013 Another Indian breakfast. I haven\u2019t made this yet, not sure if it will be a staple in the house.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Idli Mix<\/strong> \u2013 I\u2019ve tried to make this from scratch, but it wasn\u2019t happening and this mix is great!<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Dosa Mix<\/strong> \u2013 Ditto above.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Banh Xeo Mix<\/strong> \u2013 Vietnamese crepes that are to die for. \u00a0Mung beans and mushrooms, bean sprouts, wrapped in lettuce and dipped in sauce.\u00a0\u00a0I actually think this mix is just rice flower and tumeric, so I&#8217;ve used it in other recipes as well.<\/span><\/li>\n<\/ul>\n<p><strong>Flours &amp; Sugars<\/strong><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><strong>Sugar<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Jaggery<\/strong> \u2013 Goes in Indian dishes, especially Gujarati.<\/span><\/li>\n<li><span style=\"color: #808080;\"><strong>Palm Sugar<\/strong> &#8211; For Thai and other Southeast Asian cooking.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Brown Sugar<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Powdered Sugar<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Atta Flour<\/strong> \u2013 More fine than regular whole wheat flour. Used to make rotis, which I\u2019ve tried to do without consistent results. Thank goodness there is an Indian market across the street with homemade rotis!<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Unbleached Flour (Maida)<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Bread Flour<\/strong> \u2013 For bread and pizza dough. I will master this one day!<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Cornstarch<\/strong> \u2013 Thickener for Chinese sauces and a coating for fried items.<\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Baking Powder<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Baking Soda<\/strong><\/span><\/li>\n<li><span style=\"color: #888888;\"><strong>Eno<\/strong> \u2013 Fruit salt.
