What would we do without them? To me there is nothing better than the smell of spices and onions sauteing on the stove.\u00a0Below is a list of spices, masalas (spice mixes), and a couple of dried herbs, that we have on hand (most of them all the time). I would say that the first 6 are the ones we use most and keep in what is called a masala dabba (splendid invention!). The rest are used here and there, some more often than others. We store them in mason jars (<\/span><a style=\"line-height: 1.5em;\" title=\"Cup Mason Jars\" href=\"http:\/\/www.amazon.com\/Jarden-Home-Brands-Mouth-Canning\/dp\/B0000BYD0F\/ref=sr_1_4?s=home-garden&amp;ie=UTF8&amp;qid=1331767916&amp;sr=1-4\" rel=\"nofollow\">cup<\/a><span style=\"line-height: 1.5em;\">,\u00a0<\/span><a style=\"line-height: 1.5em;\" title=\"Pint Mason Jars\" href=\"http:\/\/www.amazon.com\/Kerr-0518-wide-mouth-mason\/dp\/B000VDYUJI\/ref=sr_1_3?s=home-garden&amp;ie=UTF8&amp;qid=1331767870&amp;sr=1-3\" rel=\"nofollow\">pint<\/a><span style=\"line-height: 1.5em;\">, <\/span><a style=\"line-height: 1.5em;\" title=\"BPA Free Lids\" href=\"http:\/\/www.containerstore.com\/shop?productId=10013117&amp;N=&amp;Ntt=quattro+stagioni+jar+lids\">lids<\/a><span style=\"line-height: 1.5em;\">).\u00a0I hope I&#8217;m not forgetting anything.<\/span><\/p>\n<ul>\n<li>Jeera (Cumin)<\/li>\n<li>Mustard Seeds<\/li>\n<li>Tumeric<\/li>\n<li>Chili Powder<\/li>\n<li>Coriander Powder<\/li>\n<li>Garam Masala<\/li>\n<li>Rajma Masala<\/li>\n<li>Cassia Bark<\/li>\n<li>Cinnamon Sticks and Ground<\/li>\n<li>Cloves<\/li>\n<li>Cardamom<\/li>\n<li>Fenugreek &amp; Fenugreek Leaves (Kasoori Methi)<\/li>\n<li>Hing (Asafetida)<\/li>\n<li>Amchur Powder (dried \u00a0mango)<\/li>\n<li>Oregano<\/li>\n<li>Thyme<\/li>\n<li>Fennel<\/li>\n<li>Star Anise<\/li>\n<li>Dagad Phool (just for goda masala)<\/li>\n<li>Goda Masala<\/li>\n<li>Chat masala (we like the one called Chunky Chaat, mmmm)<\/li>\n<li>Black Salt (love the sulfur flavor!)<\/li>\n<li>Jal Moodi Masala<\/li>\n<li>Allspice<\/li>\n<li>Black Peppercorns<\/li>\n<li>Caraway<\/li>\n<li>Nutmeg<\/li>\n<li>Ajwain (used in Indian breads)<\/li>\n<li>Nigella\u00a0(for achari dishes)<\/li>\n<\/ul>\n<p>But&#8230;there is a place I don&#8217;t like the smell&#8230;in my clothes! But we got lucky. Our apartment is set up in such a way that to get from the kitchen to the bedrooms, you have to go through the dining room, living room, then around the corner. Whereas in my old studio apartment, I could smell spices when I opened the closet (how on earth did that smell get into a closed closet??), now the house smells wonderfully spicey, and our clothes wonderfully Tide-y.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ah spices.
