Souplantation has the most amazing salad with broccoli, raisins and cashews in a coleslaw dressing. I am not a big raw broccoli fan, but I love this salad! This is vegetarian version that omits the bacon. You could add tempeh bacon which I didn’t have at the time. I blanch the broccoli to take away the raw taste, but they should still be crunchy. I also added yellow bell pepper.
2-3 tablespoons mayonnaise (full fat! I made my own for this, but I think I like Best Foods better :-))
1 tablespoon palm sugar (regular sugar is fine too)
2-3 cups broccoli cut into little florets
1/2 yellow bell pepper chopped
1/4 red onion chopped
1/4 cup raisins
1/4 cup cashews toasted
- Mix mayo and sugar together so that the sugar melts into the mayo.
- Blanch the broccoli by throwing broccoli into boiling water for just a minute or two. Drain.
- Throw all the ingredients together and serve.
