This dip of black beans, corn and feta is such a quick and amazing picnic dish! My friend Lily brought it to a potluck we had a while back and I just got the recipe. It does make quite a bit. If you only have a few people, I would halve the recipe.
2 cans black beans drained and rinsed
3/4 package frozen corn defrosted
1 8 ounce block feta cheese crumbled
2 bunches green onions chopped
1/2 cup olive oil
1/2 cup apple cider vinegar
1/3 cup sugar
Fritos or tortilla chips
- Mix everything together and let sit for a while to let the flavors meld!
- Serve with Fritos or tortilla chips.
