I just think this simple avocado pasta is so lovely! I was inspired by this recipe on Damn delicious. The avocados make it so creamy and the parmesan give it a little nuttiness, and the roasted grape tomatoes, yum!
My husband suggested adding nuts, so next time I will add a little toasted pine nuts to the top. I think it would add an extra lovely component!
8 ounces grape or other small tomato sliced in half
1 tablespoon olive oil
8 ounces spaghetti
Handful of basil leaves
2-3 garlic cloves
1/4 cup grated parmesan cheese
Juice from 1 lemon
Salt & fresh ground pepper
Toast pine nuts (optional)
- Toss the tomatoes with the olive oil and salt and bake for 25-30 minutes in a 375 degree oven.
- Boil spaghetti according to direction on the package.
- In a food processor, add the basil, garlic, avocados, parmesan cheese, and lemon juice and blend until smooth. Add salt and fresh ground pepper to taste and blend in.
- Toss the spaghetti with the avocado sauce and top with roasted tomatoes and maybe even some toasted pine nuts. Ooo la la.
