I created this ginger and five spice carrot soup as an accompaniment to BBQ 5 Spice Sandwiches. It is super creamy and sweet without the addition of any cream or sugar! This recipe makes 4 little side bowls of soup.
2 tablespoons olive oil
1 red onion sliced
2 garlic cloves chopped (bigger pieces keep the garlic from cooking fast and getting bitter)
2 tablespoons chopped ginger
1 pound carrots peeled and chopped
1 teaspoon Chinese 5 Spice
3 cups water
More water as needed
- Heat olive oil in a saute or sauce pan and add onions. Cook over medium heat until soft, browned a little, and translucent, adding the garlic and ginger half way through cooking the onions.
- Add the carrots, 5 spice and water and boil until the carrots are super tender.
- Blend in a blender, add salt to taste and more water if needed or to get the consistency you would like.
